Shredding Zucchini
The most difficult aspect of making zucchini fritters is shredding the zucchini. There are many ways to go about this, but I used a cheese grater.
First, clean your zucchini. Then, chop off the end. Use the larger side of the grater to make long thin strips of zucchini.
Once you have enough, lay the shreds on a clean surface and sprinkle salt on them. This helps draw out some more moisture so they crisp up better. After this, either use a cheesecloth or paper towel to squeeze out additional liquid. You want this zucchini to be as dry as you can make it.
How to Make Zucchini Fritters with Mozzarella Cheese
Making a fritter can be intimidating initially, but have no fear- it is simple! basically, it is just combining a couple ingredients then popping them on the stovetop. The hardest part? Making for them too cool off a bit HAHA!
You start by adding all the ingredients in a large bowl. I like to use a white whole wheat flour. It adds some additional depth in flavor, but all-purpose flour works just as well! It is a bit difficult to mix with a spatula so consider using your freshly washed hands to combine everything together.
Next, heat up a pan on medium high heat. Drizzle some olive oil on your pan. Grab a 1/4 cup of your zucchini dough and drop it in the pan. Use the back of your spatula to flatten it out. Allow it to cook for about 2 minutes then flip. Repeat until all of your zucchini dough is used.
What to Eat With These Zucchini Fritters
Although these zucchini fritters are delicious, you’re not a meal. You’re going to want to pair these with a source of protein. I recommend a grilled lemon salmon, chicken, or a burger!
In addition to a main dish you may want another side item. You could make some grilled asparagus or fresh sweet corn! Yum! Invite me over if you’re making this!

Zucchini Fritters with Mozzeralla Cheese
Ingredients
- 2 Cups Zucchini Shredded with water removed
- 1.2 Cup White Whole Wheat Flour
- 1/2 Cup Mozzarella Cheese Shredded
- 1 Teaspoon Garlic Powder
- 2 Teaspoons Lemon Juice
- Pinch of salt
- Drizzle Olive Oil
Instructions
- In a bowl combine all ingredients (except olive oil). You can use a spatula or freshly cleaned hands to mix everything evenly.
- Heat a pan on medium high heat. Once hot, drizzle on olive oil.
- Measure out 1/2 cup of the zucchini dough. Form a ball in your hand then plop into the pan. Use the back of your spatula to press down the fritter dough.
- Cook for about 2 minutes on each side. Repeat until all dough is used. Be sure to continue to add olive oil as more fritters are cooked.
- Once done, pat with a paper towel to remove any excess oil. Enjoy!
Notes
- Be sure fritters are completely cooked prior to consumption
