Ingredients
2CupsZucchiniShredded with water removed
1.2CupWhite Whole Wheat Flour
½CupMozzarella CheeseShredded
1TeaspoonGarlic Powder
2TeaspoonsLemon Juice
Pinch of salt
DrizzleOlive Oil

Instructions
In a bowl combine all ingredients (except olive oil). You can use a spatula or freshly cleaned hands to mix everything evenly.
Heat a pan on medium high heat. Once hot, drizzle on olive oil.
Measure out ½ cup of the zucchini dough. Form a ball in your hand then plop into the pan. Use the back of your spatula to press down the fritter dough.
Cook for about 2 minutes on each side. Repeat until all dough is used. Be sure to continue to add olive oil as more fritters are cooked.
Once done, pat with a paper towel to remove any excess oil. Enjoy!
