I still don’t know if these cookies are to be considered cookies or not. They are incredibly light and fluffy! They’re basically hand held slices of cake!

Ingredients to make Lemon Blueberry Cookies

Ingredients You’ll Need

As with other cookies, you’ll need a few pantry staples. In addition there’s a few key ingredients you just can’t make this recipe without:

Lemons– I used freshly squeezed lemon juice as I needed zest anyways.

Blueberries– I used fresh for this recipe!

Not quite an ingredient but you will also need an electric mixer. If you don’t have one, I would recommend investing in one. You can get one right off Amazon for under $30 and it will last you years!

How to Make Lemon Blueberry Cookies

Start your baking journey by preheating your oven and grabbing out your pan!

In a medium bowl, use an electric mixer to combine a softened stick of butter and sugar. Then, add in the vanilla egg, lemon juice, salt, baking soda, and baking powder.

Next, fold in the flour, lemon zest, and blueberries. Place the dough into the refrigerator for 20 minutes.

Once the 20 minute timer is up, scoop your dough onto the baking sheet and bake for about 14 minutes. After this second excruciating wait, allow them to cool a bit then enjoy!

Expert Tips and Tricks

This recipe utilizes fresh blueberries. Frozen blueberries aren’t the best replacement if you don’t have fresh. If you REALLY want to make these Lemon Blueberry Cookies but only have frozen blueberries, allow them to come to room temperature. Keep in mind that your cookies won’t come out exactly the same and will be a bit more purple!

Be sure to use an aluminum or steel pan! By using a stone pan the cookies will not form properly. They will soak into the pores stone a bit and not come off as you’d hope.

Release of Carbon Dioxide

While making this recipe you will be adding more baking soda and lemon juice to your bowl. This will create a chemical reaction. Carbon dioxide will be released in the form of bubbles.

Don’t worry if you see this occurring! This is normal and completely safe!

Here are some substitutions and additions to consider! Keep in mind that making alterations to a recipe means it may not come out exactly as written. But don’t worry, you’re making cookies, this isn’t that serious!

  • Adding white chocolate chips to this cookie would be incredible!

  • 1 Stick Butter Unsalted
  • 1/2 Cup Sugar
  • 1 Teaspoon Vanilla Extract

Instructions
 

  • Start by grabbing gout your butter to come to room temperature.
  • In a medium bowl add sugar and room temperature butter. Use and electric mixer to cream together.
  • In the same bowl, add: vanilla extract, egg, lemon juice, lemon zest, baking soda, baking powder, and salt. Use the electric mixer to combine.
  • Gently fold in flour then blueberries.
  • Cover and allow to refrigerate for 20 minutes.
  • Preheat your oven to 350 degrees Fahrenheit.
  • Use the cookie scoop to place dough on a baking sheet. Do not flatten. Baking in the oven for 13-15 minutes.
  • Once done, remove from oven and allow to set on the baking sheet for an additional 2 minutes. Then, place on a cooling rack.
  • Repeat until all dough is used. Enjoy!

If you want a carrot-flavored dessert for the Easter season but don’t want an entire carrot cake, this is the loaf for you!

You will also love this recipe if you prefer a ‘heartier’ dessert. This is not as light and airy as a cake but rather more dense and delicious!

When to Make and Enjoy A Carrot Cake Loaf

This carrot cake loaf is perfect to make around the Easter holiday, but it can be enjoyed any time of year! You can make a loaf, slice it up, and enjoy it as your sweet treat for the week!

If you are someone who enjoys a sweeter breakfast you can enjoy a carrot cake loaf parfait. Add a serving of greek yogurt to a bowl then crumble a slice on top! This is the perfect sweet and savory combo to start your day.

Moist Carrot Cake Loaf Ingredients

Ingredients You’ll Need

The main ingredients you’ll need that you may not already have on-hand are:

Carrots- Large whole carrots are the best bet!

Nutmeg- You don’t need much but this isn’t something you want to skip!

Walnuts- You can get any type and just roughly chop them to the desired size.

Some other items you will need, but are likely kitchen staples are: flour, baking soda and powder, salt, cinnamon, sugar, eggs, veggie oil, and vanilla extract.

How to Make A Carrot Cake Loaf Recipe

The most difficult aspect of this recipe is grating the carrots. The rest is a piece of cake!

Whisk together the sugar and eggs. Then, add in the veggie oil and vanilla extract. In a large bowl, mix together the rest of the dry ingredients (besides the carrots and walnuts!). Next up, combine the wet into the dry bowl.

Now comes the difficult part. Grate your cleaned and peeled carrots until you have one and a half cups of grated carrot. Use a paper towel to squeeze out excess liquid. Gently fold in the carrot and chopped walnuts.

Add the mixture to a greased glass loaf pan and bake for about 55 minutes. Allow to cool then slice and enjoy!

Expert Tips and Tricks

You may think you are making a smart choice by getting the carrot matchsticks to avoid grating. WRONG. The pre-cut carrot matchsticks are very dry. In this loaf your grated carrots are adding necessary wetness.

When folding in the grated carrots and chopped walnuts be gentle! You want to stop folding just as everything is evenly dispersed.

Be sure to use a glass loaf pan. Using a different material can result in a different outcome.

Additions and Substitutions

  • To reduce the calories you can omit the walnuts. This will reduce the entire loaf by about 390 calories. You can also skip the cream cheese frosting. This moist loaf is still delicious on its own!
  • If you aren’t a fan of walnuts but still want the great texture, you can replace them with a similar nut such as chopped pecans.
  • To get a bit more fiber you can use whole grain flour in place of all-purpose flour.
  • Spice-lover? You can add additional cinnamon and nutmeg.

Carrot cake loaf does appear as though it would be a ‘healthier’ dessert. But, the classic version has a good amount of added sweetness (which may be why we all love it so much!). My entire Moist Carrot Cake Loaf with Walnuts has just over 3,000 calories in total.

How do I make cream cheese frosting?

This Moist Carrot Cake Loaf is delicious on its own but if you add a smear of cream cheese frosting- YUM!

If you want a sweeter topping, use a hand mixer to combine 1/2 stick of Oleo, 4 ounces of cream cheese, 1.5 cups of powdered sugar, and 1 teaspoon of vanilla extract!

Some may see this loaf as attempting to be ‘healthy’ because there are carrots in it. Well, I see it better as to leave labels out of it.

You don’t need to choose this loaf because it has veggies but rather select it as your sweet treat because you want it. This is a delicious way where you happen to also get a serving of veggies!

  • Roughly chop walnuts.
  • Carefully mix in grated carrots and chopped walnuts to mixture until just combined.
  • Spray glass pan with non-stick spray and add your mixture.
  • Bake in the oven for 54-56 minutes or until a toothpick can be inserted and removed clean. Be sure to check out the notes section to avoid wet pockets.
  • Allow to cool for at least 10 minutes. Enjoy!

What is a Walnut?

Walnuts are a nut from many regions around the world but in North America they are mostly grown in California. When described they are usually compared to a brain! This is neat because their awesome nutrition content is also good for your brain.

One ounce of walnuts (think: 1/4 cup) has 2g of fiber, 4g of protein, 45mg of magnesium, and 2.5g omega-3 fatty acids. This is a great arrangement of nutrition in a small serving!

The part that you actually eat is enclosed in a hard shell. If you ever have difficulty distinguishing between walnuts and pecans think of nutcrackers! They crack this hard shell of a walnut so you can get to the delicious inner nut.

What is a Pecan?

A pecan is a nut that is grown on a pecan tree. In the United States they are typically grown in Texas, Georgia, and Louisiana.

You can see the difference between a pecan and a walnut because a pecan has straight lines while a walnut is more brain-shaped.

Pecans tend to be used more in baking as they have a soft and buttery taste compared to walnuts.

Walnuts vs Pecans: The Difference in Nutrition

Both nuts are an awesome nutrient-packed option to have!

As you can see in the comparison below the nutrition facts of both of them are very similar. So, if you are basing your choice on calorie, protein, carbohydrate, dietary fat, fiber, or magnesium content you can’t go wrong either way!

The main difference in the two (nutrition-wise) is the omega-6 to omega-3 fatty acid ratio’s. Omega-6 and Omega-3’s are essential polyunsaturated fatty acids. They both are crucial in brain and heart function.

Many tend to say omega-3 fatty acids are the ‘better’ of the two. This is a bit trickier than that.

You want to look at the ratio between the two rather than just aiming for a certain amount. It has been found that the ideal ratio is 4:1 (omega-6:omega-3) or lower.

Many American’s diets are higher in omega-6’s and lower in omega-3’s, which is why omega-3’s are often times more emphasized.

In one bowl you add all your dry ingredients and in another all your wet ingredients. You then combine dry into wet. Then, gently fold in the chocolate chips. Lastly, add the mixture to a non-stick muffin tin until each cup is 3/4 full. Remember, this recipe is for 9 muffins!

Finally, cook until a toothpick comes out clean, allow to cool, then enjoy!

Expert Tips and Tricks

Working with Almond flour can be slightly more finicky compared to using all-purpose flour. So, be cautious and use these tips and tricks when baking your muffins.

Avoid over mixing! If you do so the mixture will be too thin and the chocolate chips will fall to the bottom of the muffin tin! That will result in a muffin with a base of chocolate. I mean, if you do, that’s not too bad, it’ll still be delicious!

Be cautious with your chocolate chips. If you add more than the recommended 1/2 cup amount it may result in them sinking! Trust me, I’ve tried this recipe multiple times with additional chocolate chips and it doesn’t have a great result.

Additions and Alterations

Making some slight additions or alterations are fine but if you make too many be cautious. It may cause the recipe to no longer come out properly.

  • I am ALL FOR adding extra chocolate to desserts. Unfortunately, these muffins aren’t too strong! If you add additional weight through adding extra toppings you may end up with a flat center.
  • If you like a sweeter muffin you can add up to an additional 1/4 cup of sugar.
  • Feel free to use your milk of choice.

Are these muffins gluten free?

Yes! These muffins are gluten-free as written. Always be sure to check all your ingredients for potential cross-contamination as some may have been packaged in the same facility as gluten.

Are these muffins paleo?

Not really. You would need to make a few changes. The veggie oil would need to be replaced with an paleo-friendly version like coconut oil, use a non-dairy milk, a sugar alternative, and a paleo-approved chocolate chip variety.

Keep in mind that making these changes will alter the recipe to one that I have not tested!

Are these muffins keto?

As written, no this recipe is not keto-friendly. In order to make more appropriate for someone following a keto diet (not for medical purposes) you can swap the the sugar for an alternative such as Stevia, use sugar-free chocolate chips instead of the regular version, and a low-carb milk like unsweetened almond milk instead of classic milk.

Again, keep in mind that making these changes will alter the recipe to one that I have not tested!

A Word From A Registered Dietitian

Almond flour tends to be considered a ‘health halo’ product. That means people tend to think that by eating this version of flour instead of the classic all-purpose variety it is better for them.

Unless you are someone that cannot have gluten due to sensitivities or allergies there really isn’t a huge nutritional difference between the two flours.

Cup for cup almond flour tends to have a bit more calories, more dietary fat, less carbohydrates, and more protein. This doesn’t make one better than the other, just another option!

If you have ever had a chance to try cookie butter you know you can’t go wrong with anything flavored this way!

In addition to its delicious taste, you’ll also love the simplicity! Making donuts can seem intimidating. These are baked donuts. That makes this recipe simple and approachable!

Because this recipe only makes six donuts at a time this is the perfect recipe for a Sunday afternoon baking session. Then, you’ll have a sweet treat for the rest of the week!

Another great time to make these are for small gatherings. If you are visiting a couples home with your partner there’s only four people, yet you may want to bring a dessert! With this small-batch recipe you won’t be taking an overwhelming amount.

Ingredients You’ll Need

Many items you’ll need are kitchen staples but the main ingredient you cannot forget is:

Cookie Butter Make sure you snag the creamy version.

Some other kitchen staples to be sure to have are: eggs, milk, veggie oil, vanilla extract, flour, baking powder, sugar, salt, and cinnamon.

If you choose to make the Cookie Butter Icing (I highly recommend!) you will also need some powdered sugar!

In addition to these ingredients you also will need a donut pan. This is an essential!

Making a donut at home sounds intimidating. Trust me, I will make this as pain-free and simple as possible!

In a large bowl combine all the dry ingredients, mix, and set aside.

In a small bowl warm up your cookie butter in the microwave until it liquifies. Then, add in the wet ingredients (besides the egg). Once all wet ingredients are combined and cookie butter has cooled a bit, add in the eggs.

Plus, with a baked donut you don’t have to deal with oil or the frying process!

Expert Tips and Tricks

When warming up the cookie butter be sure to not over heat it! Instead of becoming smooth and liquid it can become hard and difficult to work with. I recommend heating in 15 second increments to prevent this.

With this, it is also important to allow the liquified cookie butter to cool a bit. Mix in the other wet ingredients before the eggs to give it some time. If you add the eggs in too soon they may cook! We don’t want scrambled eggs!

Substitutions and Additions for Cookie Butter Donuts

Unfortunately, it is difficult to make substitutions with this recipe. One substitution you can make is the type of cookie butter you use! Trader Joes makes a popular version created from Speculoos cookies.

If you would like to add to these Cookies Butter Donuts it is a bit easier.

A delicious addition would be topping an iced duct with crushed Biscoff cookies! Triple the cookie butter flavor!

  • In a small bowl add cookie butter. Warm in 15 second increments until liquified. Add powdered sugar and mix thoroughly. Drizzle on cooled donuts.

What is A Greek Yogurt Parfait

A Greek yogurt parfait is a meal or snack that has a base layer of Greek yogurt and typically topped with fruit and granola.

It is a great way to get in a serving of protein, fruit, and any other nutritious additions!

Yogurt vs Greek Yogurt

There are a few differences between typical yogurt and Greek yogurt beyond just the consistency.

Creation

Regular yogurt is made by heating then cooling milk, adding cultures, fermented, then chilled and packaged!

Greek yogurts creations begins just as regular yogurt does. It is heated, cooled, has cultures added, then fermented for a similar amount of time.

The big difference lies in the straining. The yogurt is strained using a cheesecloth (or other straining method) until it reaches the desired consistency.

Fun fact- it takes 3-4 times more milk to make Greek yogurt than regular yogurt!

Similar to regular yogurt, it is then cooled and packaged!

Nutrition

The nutrition of Greek yogurt and regular yogurt can vary based on the specific product you have but I compared a general serving (6oz) of unflavored and unsweetend batch of each.

As you can see, Greek yogurt may have a tad more calories but there is more than double the protein content! There is about half the amount of carbs and a single more gram of dietary fat in Greek yogurt over regular yogurt.

Taste and Texture

Because of the straining process the texture of the two varieties differ.

Greek yogurt will be thicker than regular yogurt.

Regular yogurt tends to be sweeter while Greek yogurt will be more tangy.

There are even containers that keep each ingredient separate to ensure freshness!

What is an Alani Nu Energy Drink?

Alani Nu is a supplement company that is most popular for their energy drinks while also offering protein powders, protein bars, gummy bears, etc.

They offer at least 12 energy drink flavors plus seasonal offerings with each flavor offering 200mg of caffeine.

These drinks are very popular for gym-goers, college students, and many young-adult caffeine enthusiasts.

Alani Nu Energy Drink Ingredients

A can of Alani Nu contains: carbonated water, citric acid, natural flavor, taurine, erythritol, sodium citrate, L-theanine, caffeine, sucralose, Panax ginseng root. There is also a list of (mostly vitamins and minerals) that are included in small amounts.

This list of ingredients may seem mind boggling but let’s break it down a bit. But before we do, you need to know that ingredients are placed in a specific order based on their amounts. So, because carbonated water is first on this list we know this can has more carbonated water than any other ingredient.

Carbonated Water- This is the main component and base for this drink.

Citric Acid- This is usually added for both flavor and shelf life.

Natural Flavor- This can be different drink-to-drink. It is not always specifically known but it is typically included for flavor.

Taurine- This is an amino acid. Many energy drinks will add it for it’s supposed performance enhacement.

Erythritol- This is a sugar alcohol. This aids the drink to be so low in calories while still being sweet. Caution: some stomachs won’t tolerate this sugar alcohol well!

L-Theanin- This is another amino acid. It is likely added to help prevent the jitters!

Caffeine- Caffeine provides energy. This is probably why this drink selected!

Sucralose- This is an artificial sweetener. Its purpose is similar to erythritol’s. It adds sweetness without additional calories. Again, be cautious as not all stomachs tolerate surculose well.

Panax Ginseng Root- This herb is typically used in traditional medicine. There’s not much research to back it but it is said to aid in lowering cholesterol, managing blood sugar, and reducing inflammation.3

As you can see there’s not too much to a can of Alani besides its’ 10 calories, a bit of sodium, and a touch of carbs.

The potential unexpected upside to an energy drink is that, with its given supplement classification, it does have a great amount of vitamins and minerals. It has over a full day’s worth of Niacin, vitamin B6, B12, biotin, and pantothenic acid!

With a balanced diet it is likely you are already getting these nutrients but it nice to know this supplement is providing some benefits beyond caffeine!

Energy Drink Side Effects

The main side effect many experience from drinking a can of Alani Nu is an energy boost! On the same hand, this may also bring about some jitters or issues with sleep.

If you are unable to tolerate sugar alternatives or sugar alcohols you may find you get an upset stomach as both are included in this drink.

Drinking an energy drink may become habitual and lead to overconsumption. This can be dangerous for your health in the long term.

Other potential side effects include risk of elevated blood pressure, heart palpations, diarrhea, nausea, and dental erosion.

Are Alani Nu Drinks Good For You? What Are The Benefits?

That depends on YOU! Having a half or one can of Alani Nu here and there won’t be too bad and won’t be too good.

200mg will definitely give you a kick of energy (unless you consume a similar or great amount often) to get what you need to do done!

You will be getting your full daily dose of niacin, vitamin B6 & B12, and pantothenic acid. Many people don’t have an issue getting these in but if you do, this is an awesome benefit!

Although these drinks can come with a health halo and have minimal calories, they should not be consumed regularly.

How Much Caffeine is in an Alani Nu Energy Drink?

One Alani Nu energy drink has 200mg of caffeine. This is half of the max recommended amount of caffeine intake for a day.

The FDA does not recommend more than 400mg of caffeine per day.1 This recommendation applies to adults. It is not recommended for children or teens to consume energy drinks.

Understanding that a can of Alani Nu has half the max recommended amount of caffeine may give good perspective.

On one hand it may be less than you expected. If you have two cups of coffee in the morning, it is the same amount of caffeine. On the other hand, if you don’t normally consume any caffeinated drinks this may be quite a bit more than you expected!

Some of their more popular flavors are Pink Slush, Cherry Twist, Hawaiian Shaved Ice, Witch’s Brew (Seasonal), and Cosmic Stardust.

My favorite switches from Witch’s Brew when it is in season to Cherry Twist and Breezeberry. If I can find it, Kimade, is also a top contender for me!

Now, you know the nutrition of pea’s but what about the taste!? I mean, if it doesn’t taste good you’re not going to eat it!

I found that it tends to have a bit of an earthy and chalky taste.

Fortunately, you can mask this taste in some creative ways. Try mixing it into a yogurt bowl in addition to your favorite toppings, add a scoop to a smoothie, or bake it into a chocolatey dessert.

Personally, I enjoy the taste of soy more than pea. The thing is, you’re going to have to try it for yourself to know which you prefer!

I think the soy protein I’ve had has a nutty and chalky taste. Just like other protein options there are some creative ways to mask the flavor is you don’t enjoy it but want to consume it.

You could blend it with some other strong flavors (cinnamon, chocolate, etc.), use it in savory dishes that it can be masked by, or cut with other proteins you enjoy more!

As you can see both pea protein and soy protein have all 9 essential amino acids. The thing is, the amount of each still matters.

Pea protein only has 11mg/g of methionine. In order for the protein to be complete it would have needed at least 25mg/g.

Allergies and Sensitivities on Pea Protein vs Soy Protein

It is not too common to see a pea allergy, sensitivity or intolerance but it is very possible someone is living with it! People that have a peanut, soy, or legume allergy may find an issue with pea as well. It may be due to the protein or cross-contamination.

A pea protein may contain artificial sweeteners that also may be a source of discomfort, the fiber content may be higher than you’re are used to which can also lead to stomach issues.

Basically, if you are finding that you are having issues while consuming pea protein be sure to seek out a health professional but also know it may be another ingredient or the fiber content that is the cause!

It is more common to encounter a soy allergy than a pea allergy. If you have a known allergy you should never choose to consume it.

Some reactions may look like (but not limited to) skin rash, respiratory issues, nausea, diarrhea, cramps, and anaphylaxis.

Soy protein contains phytoestrogen. This is a type of plant estrogen.3 This is not to perpetuate the long thought that soy may cause breast cancer. There is actually research stating nearly the opposite! Breastcancer.org flat out states, ‘eating soy does not increase your risk of breast cancer’.4

Similar to soy, pea protein also contains phytoestrogen. Just as with soy, (although it does not get the hate that soy does) there is little research to show any concern that consumption may lead to breast cancer.

Which Protein Is Best For YOU?

There are many factors to consider when selecting which, soy or pea protein, you should choose:

  • Do you have easier access to one or another?
  • Which makes you feel the best?
  • Does one taste better to you?
  • Do you have a general preference?
  • Are there any cultural reasons to pick one over the other?

Nobody else can tell you which is the proper one to consume. You need to decide which fits into your life the best!

Protein is an important macronutrient, but you may be getting more than you know! Protein, albeit minimal, is in many unassuming foods such as dairy products, nuts and seeds, and even in many breads!

Incredibly, you can mix everything in one bowl. If you aren’t too particular you could even mix all the ingredients right not the baking dish! Does that make this a 0-bowl recipe!?

Ingredients You’ll Need

Although not an ingredient, you will need a 8×8 Glass Dish to make these baked oats in. I have a glass dish that came with a lid. This is an easy way to bake the oats then store!

Chocolate Chips– Use any chocolate chips you enjoy!

Rolled Oats– These are also called Old Fashioned oats. Just DO NOT use quick oats!

Fresh Raspberries- I use fresh raspberries for their great texture and flavor.

In addition, you’ll need some pantry staples including baking powder, eggs, milk, salt, vanilla extract, and maple syrup.

How to Make Chocolate Raspberry Baked Oats

This baked oats recipe is easy as can be! All you need is the ingredients, a medium bowl, and a big spoon!

In a medium sized bowl add all your ingredients (plus any optional additions- see Additions and Substitutions for Chocolate Raspberry Baked Oats for ideas) except your raspberries. Thoroughly mix these up. Then, gently fold in the raspberries. We don’t want these to get smashed!

Spray an 8×8 baking dish with nonstick spray then add your mixture in. Move the ingredients around to ensure it is spread evenly in the dish.

Next, bake in the oven for about 35 minutes. Allow this to cool for about 5 minutes. We don’t want to burn your mouth! Cut the oats into 9 squares.

Pop out a slice, top with anything you’d like (I recommend some vanilla yogurt!) and enjoy!

Expert Tips and Tricks

  • One of the most important tip I have for you is to ensure you are using the proper type of oats. A layer is removed from quick-oats to allow for them to quick quicker. That is great in a pinch but not for this recipe! Use old-fashioned oats or rolled oats so the oats don’t turn out mushy!
  • Don’t skip out on the salt! It may seem strange to add salt to oatmeal but it adds a tremendous depth of flavor.
  • I HIGHLY recommend pairing a slice with some vanilla yogurt! The change in temperature and texture really makes for a delicious meal.
  • Avoid overcooking. This will result a dry and hard dish.

It a general sense- yes. No matter how ‘healthful’ a food is, it is still ideal to have a varied diet to ensure all nutrients are being had!

  • Top with vanilla yogurt.

Maple Syrup– Use any you enjoy! I actually get mine from Sam’s Club as it is the most cost effective!

Walnuts– Chopped are easiest for less cutting but whole work too. There will just be additional cutting.

Flaky Salt– Maldon salt is delicious! I wouldn’t recommend using table salt. This adds that baked-style flavor you’ll want!

In addition to these key ingredients you’ll also need these typical baking ingredients: butter, an egg, flour, brown sugar, vanilla extract baking powder and soda, salt, nutmeg, and cinnamon.

How to Make Maple Walnut Cookies

These cookies aren’t your classic chocolate chip. They are lightly sweet, warm maple with depth of earthy walnuts. Topped with flaky salt, they are a perfect balance of sweet and salty!

But, just because they are a more refined flavor doesn’t mean they are more difficult to make.

In one bowl you will be combining the dry ingredients and in another combining the wet ingredients. Then, combine the two bowls of ingredients together.

Next up you need to chill the dough! It can be difficult to wait but this step is vital!

Add your cookie dough to your baking sheet and bake for 9 minutes, add your flaky salt, then pop onto a cooling rack. Easy as pie (er- cookies)!

They are not overly sweet and have a slight texture interest with the chopped walnuts. Think of them as being something you’d enjoy dipped in a warm mug of coffee.

Is honey or maple syrup better for cookies?

Either works fine! I would recommend sticking to the maple syrup for this recipe as it ads a warm flavor to the cookies!

Can I make a maple frosting?

You sure can! I have a maple Icing that would be delicious! In a bowl whip together 1/2 cup of powdered sugar, 1 tablespoon of maple syrup, and 1 tablespoon of heavy whipping cream. If you need more double the ingredients!

Additions and Substitutions

Instead of the chopped walnuts you can try substituting:

  • Chocolate chips
  • Chopped pecans or another type of nut
  • White chocolate chips
  • Butterscotch chips

I would not recommend replacing the maple syrup. Not only does it add a delicious flavor but it is also vital to the structure of the cookie!

In reality, cookies can easily fit into a healthy and balanced diet! Having a cookie or two to satisfy your sweets craving is the perfect cure. If you opt for a low-calorie, high-protein, low-fat, etc. version of what you truly want, you will likely end up eating it anyways.

Dry Bowl

  • 1.5 Cup All-Purpose Flour
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Nutmeg
  • 1/2 Teaspoon Cinnamon
  • 1/4 Cup Walnuts Shelled and Chopped

Wet Bowl

  • 1 Stick Butter Room Temperature
  • 1/3 Cup Brown Sugar Packed
  • 1 Teaspoon Vanilla Extract
  • 1/3 Cup Maple Syrup
  • 1 Egg
  • 1 Tablespoon Flaky Salt

Optional

  • Walnuts

Instructions
 

  • Begin by grabbing out all ingredients to ensure you have them on hand! Preheat your oven to 350 degrees Fahrenheit.
  • In a medium bowl combine: flour, baking powder, baking soda, nutmeg, cinnamon, and chopped walnuts.
  • Allow the butter and egg to reach room temperature. Then, in a medium bowl use your electric mixer to cream together the butter and brown sugar.
  • Mix in the vanilla extract, maple syrup, and egg until well combined.
  • Slowly combine the bowl of dry ingredients into the bowl of wet ingredients.
  • Place the mixture into the refrigerator for 10 minutes to chill.
  • Use your cookie dough scoop to grab equal portion of dough. Set on a baking sheet. Do not flatten.
  • Top with flaky salt. If desired, top with additional walnuts.
  • Bake for 9 minutes. Once done, remove from the oven and immediately place on a cooling rack for 10 minutes. Enjoy!
