Get out ingredients. Allow chill to come off cream cheese. Clean mushrooms. Preheat oven to 350 degrees.
Remove the center of the mushrooms. You can save these to enjoy in other recipes but they are not needed for these stuffed mushrooms!
Heat a small saucepan to low to medium heat. Add olive oil and garlic. Allow garlic to get fragrant, then add spinach. Heat until spinach is wilted (~4 minutes).
Add the heated mixture to a medium bowl. Add the cream cheese and ¼ cup of the parmesan cheese. Mix until thoroughly combined. The heated spinach will soften the cheeses enough to mix well.
Spoon this mixture into the center of the mushrooms.
Add mushrooms to an oven-safe dish. Top with remaining ½ cup of parmesan cheese. Bake for 27-29 minutes or until golden. Allow to cool and enjoy!
