Instructions
Preheat oven to 350 degrees fahrenheit.
Heavily spray a cupcake pan. Set aside.
Chop your bell peppers, mushrooms, spinach, and ham. Set aside.
In a large bowl whisk together the eggs, egg whites, and milk.
Add in chopped bell peppers, mushrooms, spinach, ham, cheese, garlic powder, and salt & pepper. Mix thoroughly.
Pour into cupcake pan until wells are ¾ of the way full.
Bake 22-25 minutes. Remove from oven and allow to mostly cool.
Run a knife along the edges to ensure a smooth removal. Enjoy!
Notes
Store extras in an airtight container in the refrigerator.
Freeze any extras for future use.
