Instructions
Preheat oven to 400 degrees fahrenheit. Heavily spray a muffin tin with non-stick spray.
Clean and dice strawberries. Add to a small bowl. Coat with 2 teaspoons flour.
In one bowl combine: 1 and ½ cups flour, sugar, baking soda, baking powder, and salt.
In a separate bowl combine: oil, vanilla extract, lemon juice, egg, and milk.
Add wet mixture into the bowl with dry mixture.
Carefully add in strawberries and white chocolate chips. Do not overmix.
Evenly disperse mixture into muffin tin. Top with additional strawberries and white chocolate chips, if desired. Cook for 17-20 minutes. Enjoy!
Notes
Allow muffins to cool before enjoying.
Store in an airtight container.
