Preheat your air fryer to 400 degrees fahrenheit. Clean your red potatoes and cut in half lengthwise then cut those pieces in half. Because not all potatoes are the same size you may need to make a couple more cuts on some potatoes. Try your best to make all pieces similar in size.
Peel your onion. Cut in half then into small strips.
Place cut potatoes and onions into a medium bowl.
Add in olive oil and salt and pepper. Use a large spoon to thoroughly mix so everything is coated in oil.
Add to your air fryer in a single layer. Cook or 25 minutes, shaking the container every so often.
Once crispy, place in a bowl and add cilantro, if wanted. Enjoy!
