In a large bowl combine brown sugar and yeast. Microwave milk for 45 seconds then add to the mixture. Combine. Let rest for about 10 minutes. You will know it is ready when you see that the top is foamy.
In a separate bowl combine butter and mashed banana. Mix into yeast with a hand or stand mixer. Slowly add in salt, egg, vanilla, and bread flour in ½ cup increments and continue to mix. You may need to use your hands.
Cover your bowl with cling wrap and allow to rest for about an hour. Dough should grow.
While dough is rising clean a workspace. Once dough is ready lightly spread flour on workspace. Place dough on the floured surface. Sprinkle flour on a hand roller and roll into a rectangle about ⅓ inch thick.
Filling
Grease two 8-inch circle pans. Set aside. In a bowl combine brown sugar, cinnamon, and nutmeg. Spread melted butter on dough then cover with filling mixture.
Slice bananas into coins. Lay them lengthwise on dough. Carefully roll dough. Use a serrated knife or floss to cut into slices.
Preheat oven to 350 degrees Fahrenheit. Place one roll in the center of the pan with others around it. Allow pans to sit for 10-15 minutes to rise. Bake in oven for 25 minutes.
Icing
In a bowl combine cream cheese, powdered sugar, and peanut butter.
If you can wait, allow cinnamon rolls to cool before icing.
Enjoy!
Notes
If you aren't the biggest fan reduce the amount of peanut butter and increase the amount of cream cheese
After mixing your frosting and it is too thick for your liking add desired milk and continue to mix until you reach your desired consistency
