Ingredients
1Egg
2TablespoonsSugar
1TablespoonVegetable Oil
1/3CupAll Purpose Flour
1/4Teaspoon Baking Soda
1/4TeaspoonCinnamon
1/4CupGrated Carrot
Icing
1TablespoonButterUnsalted, Softened
1OunceCream CheeseSoftened
2 DashesVanilla Extract
1/3CupPowdered Sugar
Instructions
Clean and remove outer layer of carrots. Grate carrots finely.
In a mug cream together the egg and sugar.
Add in the vegetable oil, flour, baking soda, and cinnamon.
Gently fold in the grated carrots.
Microwave for 1 minute 15 seconds.
Allow to cool. While waiting make the icing.
Mix together the softened butter, cream cheese, and vanilla. Add to mug cake.
Top with additional grated carrot, if desired. Enjoy!
Notes
Enjoy immediately! Mug cakes aren't as tasty leftover and reheated.
