Skip the over-priced store bought granola and make your own at home! It only takes a couple minutes to whip together and you’ll save yourself at least $4! Chai is a mixture of different spices that come together for that recognizable flavor. The most noticeable of the notes are cardamon and cinnamon. Cardamon can be an expensive spice and not often used, so I found a way to reach this desired flavor without breaking the bank. Chai is popular in India, but the Chai we have here in America (think of your favorite chai tea latte from Starbucks) is a bit different. Chai actually means ‘tea’. This means we don’t even use the word correctly!

Pair Chai Spiced Granola can be eaten so many ways- with toasted coconut yogurt for an extra flavor kick, with your favorite yogurt and fruit pairing as a healthy breakfast parfait, or just by the handful.

Chai Spice Granola

Ingredients
  

  • 2 Cup Quick Oats
  • 2/3 Cup Almonds Roughly Chopped
  • 1/3 Cup Walnuts Roughly Chopped
  • 2 TSP Cinnamon
  • 1 TSP Nutmeg
  • 1 TSP Ginger
  • 1 TSP All Spice
  • 1/4 Cup Coconut Oil
  • 1/3 Cup Maple Syrup
  • 1 TSP Vanilla Extract

Instructions
 

  • Pre-heat oven to 325. Take a baking sheet and line with parchment paper and set aside.
  • In a large bowl combine: oats, almonds, walnuts, cinnamon, nutmeg, ginger, and allspice. Set aside.
  • Melt coconut oil in the microwave in a separate bowl.
  • Add maple syrup and vanilla to the bowl of melted coconut oil.
  • Pour liquid mixture to bowl of oats and stir until evenly combined.
  • Place mixture on lined sheet and evenly spread out. Bake in oven for 30 minutes.
  • Once done let cool. Once cool break apart and store in an air-tight container.

Notes

  • If you like your granola a little sweeter, drizzle honey on top when there is a few mixtures of baking reminaing.
