The main ingredients you need to make Strawberry Rhubarb Baked Oatmeal you will definitely need: strawberries, rhubarb, and oats!
Some ingredients you may not expect (and can omit if you don’t want to purchase them) are hemp hearts, chia seeds, and honey! Hemp hearts add some easy protein, chia seeds pump up the fiber, and honey makes the oatmeal more sweet! All are not 100% necessary, but I enjoy having them.
In addition, you will need to utilize some pantry staples such as cinnamon, vanilla extract, and salt.
How to Make Strawberry Rhubarb Baked Oatmeal
If you’ve never made baked oatmeal, no worries, I’ve got you covered. We’ll walk through it together so it comes out exactly as it should!
In a large bowl combine the oats, chia seeds, hemp hearts, protein powder, cinnamon, and salt. Set this aside.
Now, grab out a medium sized bowl. In it add the milk, eggs, honey, and vanilla extract then mix it together well.
Next up, add the wet mixture to the dry mixture. Make sure these are well combined, then fold in the chopped strawberries and rhubarb.
Add this mixture to a non-stick 9×9 dish and flatten out. Bake at 350 degrees Fahrenheit for about 30 minutes!
Lastly, you’re going to want to let this cool a bit before digging in. It’ll be quite hot!

Strawberry Rhubarb Baked Oatmeal
Equipment
- 1 9×9 Pan
Ingredients
Dry Ingredients
- 3/4 Cup Oats Quick
- 1 Tablespoon Chia Seeds
- 5 Teaspoons Hemp Hearts
- 1 Scoop Vanilla Protein Powder I used the brand Ascent
- 1 Teaspoon Cinnamon
- 1/4 Teaspoon Salt
Wet Ingredients
- 3/4 Cup Milk
- 2 Eggs
- 2 Tablespoons Honey
- 1 Teaspoon Vanilla Extract
Chopped Fruit
- 1/2 Cup Strawberries Sliced
- 1/2 Cup Rhubarb Diced
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Spray a 9×9 pan with non-stick spray. Set Aside. Grab out all ingredients to ensure you have them.
- In a large bowl combine: oats, chia seeds, hemp hearts, protein powder, cinnamon and salt.
- In a medium bowl combine: milk, eggs, honey, and vanilla extract. Ensure it is mixed well as the honey may settle to the bottom.
- Add the wet ingredients into the large bowl of dry ingredients. Once mixed thoroughly, add in strawberries and rhubarb and mix.
- Add mixture to the 9×9 pan. Bake in the oven for 30-35 minutes.
- Once done, remove from oven and allow to cool. Enjoy!

- Store in an airtight container in the the fridge
