In a medium sized bowl cream together your butter and brown sugar with an electric mixer. Then, mix in an egg, vanilla, and maple syrup. Set this bowl aside.

One of the biggest tip I suggest you adhere to is using a cookie scoop. This ensure your cookies all are made up of (about) the same amount of dough and are (about) the same shape.
Another tip I have for these cookies is to make them when you want to enjoy them! Due to the moisture content of the pumpkin these cookies quickly get very moist. So, avoid making them ahead of time!

The depends on what you personally entail with the word ‘healthy’. If you mean, “are they low calorie”? No, they are not. Well, if you compare it to a Crumbl cookie it is less.
These may be ‘normal’ cookies but they go have a fair amount of oats and pumpkin puree. Having these two items in your diet is great for you! They provide energy and a great source of vitamin A.
Can I omit the flour?
Not really. But, if you don’t have all-purpose flour you can blend some oats up until you have ¾ cup worth in its place.

- ¾ Cup Flour All-Purpose
- 1 Cup Old-Fashioned Oats
- 1 Teaspoon Baking Soda
- 1 Teaspoon Baking Powder
- 1 Teaspoon Cinnamon
- ½ Teaspoon Salt
- ½ Teaspoon Nutmeg
- 1 Stick Butter Unsalted; softened
- ½ Cup Pumpkin Puree
- ½ Cup Brown Sugar Packed
- 2 Tablespoons Maple Syrup
- 1 Egg
- 1 Teaspoon Vanilla Extract
- ½ Cup Chocolate Chips
Instructions
- Preheat oven to 350 degrees Fahrenheit. Grab out a cookie sheet and set aside.
- In a large bowl combine: flour, oats. baking soda, baking powder, cinnamon, salt, and nutmeg.
- In a separate medium bowl use an electric mixer to combine: pumpkin puree, butter, brown sugar, maple syrup, egg, and vanilla extract.
- Incorporate the medium bowl ingredients into the large bowl ingredients.
- Fold in chocolate chips. Add additional chocolate chips if desired.
- Use a standard cookie scoop to grab a scoop of dough and place on your cookie sheet. Do not flatten.
- Bake in oven for 13 minutes or until fully baked.
- Once done, remove from oven and immediately transfer to a cooling rack. Enjoy!
