Baked Donuts
When you think of a donut it’s probably been fried. But, have you tried a baked donut yet? Well, don’t knock em’ until you try em’!
All you need is a donut pan. You can find them at many stores like Meijer, Target, or Amazon! By purchasing through the donut pan link above, you will be supporting me at no cost to you!
This makes it so your donuts have the classic circle shape with a hole in the middle. It’s very difficult to make baked donuts that keep their shape without it. I highly recommend snagging one if you want to make baked donuts!
Lemon Blueberry Flavor Combination
Lemon and blueberry flavors have been combined for ages. This is simply because they pair together so well. Once you take a bit of these Lemon Blueberry Baked Donuts you’ll struggle to resist going for more.
Blueberries are sweet and tart while lemons are bright and acidic. Because of their individual characteristics lemon and blueberry flavors are often pair together. They complement each other in a way that makes the outcome delicious and indulgent!
Why You Should Make Lemon Blueberry Baked Donuts
These Lemon Blueberry Baked Donuts are the perfect, unique spring treat.

If you bring a batch or two of these fresh donuts they’ll become the highlight of the event. Show off your skills and make a batch of donuts. Then, don’t tell anyone how easy they are to make.
Don’t let the colder months decide when you can enjoy donuts! It’s not often you find a refreshing donut flavor that makes sense to eat in warm weather!
Michigan Blueberries
Have you ever gone blueberry picking? If not I highly recommend it! You can select each and every blueberry you want- and even sneak a couple bites!
In Michigan blueberries are in season from July to September. If you want to pick I wouldn’t wait for September to roll around- the blueberry farms may be already picked!
Although it may seem a bit arbitrary Michigan is actually the 3rd largest blueberry producer in the United States. So, if you live in Michigan you are surrounded by blueberry fields and may not even realize it.
Want to know the best part of including blueberries in these Lemon Blueberry Baked Donuts? Blueberries have a massive amount of antioxidants, are low-calorie, and can contribute to your daily recommended fruit and veggies intake goals!
Blueberries vs. Wild Blueberries
Did you realize there is a difference between your everyday blueberries and wild blueberries?
The classic fresh pint of blueberries you see in your local grocery store are likely ‘regular’. If you are on the hunt for wild blueberries, they can typically be found in the frozen aisle of the same grocery store. Wild blueberries aren’t as popular to eat fresh so they are mainly found frozen. Don’t worry- when fruit is frozen it is just as good for you as fresh fruit!
Wild blueberries are a bit smaller, a deeper color, and jam-packed with nutrients! On the other hand they are also a bit more bitter than regular blueberries. They may not be the best for snacking on, but a small amount will make an big impact in a smoothie!
Tips and Tricks For Making Lemon Blueberry Baked Donuts
- Use a large yet shallow bowl for the lemon glaze. This will make dipping the tops of the donuts in easier!
- Be sure to allow the donuts cool before adding the glaze. If you do, it will melt right off!
- I used Michigan blueberries that I had picked and froze the previous season. With this they tend to sink to the bottom of the donut pan. There’s no issue with this, but using fresh blueberries would prevent this!
- Adding lemon zest increases the lemon flavor heavily. If you want more lemon flavor consider increasing the amount of lemon zest you use. If you want less lemon flavor, consider committing lemon zest all together.
- You may want to save any leftover glaze. If you do not eat the donuts immediately the glaze will begin to absorb into the donut over time. You can add additional glaze with the leftovers when you go for seconds!

Lemon Blueberry Baked Donuts
Ingredients
Lemon Blueberry Baked Donuts
- 1 Cup Flour
- 1 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 1/8 Teaspoon Salt
- 1/2 Cup Sugar
- 1/4 Cup Oil
- 1 Egg
- 2 Teaspoons Lemon Juice
- 1 Teaspoon Vanilla Extract
- 1/3 Cup Milk
- 1 and 1/2 Cup Blueberries Frozen (If using fresh do 1 cup)
Lemon Icing
- 2 Cups Powdered Sugar
- 2.5 Tablespoons Lemon Juice
- Lemon Zest Optional
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Spray your donut pan with non-stick spray and set aside.
- In a small bowl combine: flour, baking powder, baking soda, and salt.
- In a large bowl combine sugar, oil, egg, lemon juice, vanilla, and milk.
- Slowly mix ingredients in the flour bowl into the sugar bowl. Once fully combined, carefully fold in blueberries.
- Fill donut pan and bake in oven 15-20 minutes. Baking time varies on many factors. Once a toothpick can be inserted and removed clean, donuts are done.
- Set pan on counter and allow to set. Once slightly cooled, remove donuts from pan and set on a drying rack.
- While donuts are cooling mix together icing.
- Once donuts are ready to be iced simply dip the tops into a large, shallow bowl with icing.
Notes
- Ensure your donuts are fully cooled before adding the icing or else it will just melt off
- Save additional icing for donuts the next day! The icing will sink into the donuts, so additional glaze is nice!
