Not only is it a more simple version of stuffed bell peppers, it is also a great dish to meal prep. You can make this dish ahead of time. Then when you need dinner ready in a flash, pop it in the oven for 25 minutes and you’ve got a healthy yet hearty meal for the whole family to enjoy.
Deconstructed Stuffed Pepper Ingredients
To make Deconstructed Stuffed Pepper Casserole you will mainly need:
- Ground turkey: Use turkey instead of beef for a nice flavor change.
- Rice: A simple and delicious carb to keep you full!
- Bell peppers: Cut these in larger chunks to more easily taste them.
- Onion: Simple, yet necessary.
- Tomato sauce: This tomato sauce packs a ton of flavor to this casserole.
- Mozzarella cheese: This is a different type of cheese than you classic stuffed pepper recipe, but it definitely holds its own.
Using Ground Turkey Instead of Ground Beef
A classic stuffed bell pepper recipe would typically use ground beef. In this recipe, I use ground turkey. There are SO MANY recipes using ground beef that sometimes it’s nice to change things up.
Another benefit to using ground turkey instead of ground beef are nutrition reasons. Ground turkey tends to have less saturated fat than ground beef. If you are looking to reduce the amount of saturated fat in your diet, this is an easy swap!
How To Make Stuffed Pepper Casserole
Start to make this casserole by browning the ground turkey. Next, add in the chopped onion, bell pepper pieces, seasonings, bouillon broth, rice, and of course- cheese!
Once the rice is softened and everything is well combined, plop the mixture into a 9×13 casserole dish. Top with more cheese, if you’d like.
At this point you can place the dish in the ridge to bake later, or you can immediately bake it for a short 25 minutes.
This is a filling meal on it’s own but if you would like a side or two I would pair it with a simple caesar salad and some bread twists!

Delicious Deconstructed Stuffed Pepper Casserole
Ingredients
- 1 Pound Ground Turkey
- 4 Bell Peppers 2 Red and 2 Green, cut into larger squares (see photo above)
- 2 Cups Rice
- 1 Can Tomato Sauce 15 Ounces
- 1 Onion Finely chopped
- 2 Cups Shredded Mozzerella Cheese
- 2.5 Tablespoons Worcestershire Sauce
- 2 Bullion Cubes
- 2 Cups Water Boiling
- 2 Teaspoons Garlic
- 2 Teaspoons Italian Seasoning
- 1 Teaspoon Parsley
- Salt and Pepper to Taste
Instructions
- Preheat oven to 350 degrees Fahrenheit. Spray a 9x13 pan with non-stick spray and set aside.
- Heat 2 cups of water until boiling then add bouillon cubes and mix until dissolved. Set aside.
- Clean all vegetables. Finely chop onion and cut bell peppers into 1/2 inch pieces.
- In a large pan add turkey and cook over medium heat. Then, once it's halfway cooked add rice, tomato sauce, onion, bell peppers, worcestershire sauce, bouillon broth, garlic, italian seasoning, parsley, and salt & pepper to taste. Once rice is soft (about 10 minutes), add in half the cheese and mix.
- Add mixture to greased pan and flatten out. Top with additional cheese. Cover with aluminum foil and bake in oven for 25 minutes.
- Enjoy!

- Store any leftovers in an airtight container in the refridgerator
