Chickpea Soup with Sausage
Chickpea Soup with Sausage is a hearty yet delicious combination of flavors that makes for your newest favorite soup. This comforting dish can be made in just minutes, and keep you full for hours!
Ingredients
- 2 Cans Chickpeas
- 1 and 1/4 Pounds Sausage Sweet Italian
- 5 Ounces Spinach
- 4 Whole Carrots
- 1/2 Whole Onion White
- 4 Cubes Beef Bullion
- 2/3 Cups Heavy Whipping Cream
- 8 Cups Water Hot
- 2 Tablespoons Garlic Divided
Instructions
- Cook sausage until it has a minimum internal temperature of 160 degrees Fahrenheit with 1 tablespoons of garlic. Drain out fat and set aside.
- Heat 8 cups of water until nearly boiling. Stir in 4 beef bullion cubes until dissolved. Set aside.
- Dice onion and carrots. In a large pot add onion, carrots, and garlic. Cook until onion is translucent. This will be about 5 minutes, with the lid on.
- Add in the beef broth, chickpeas, sausage, spinach, and heavy whipping cream.
- Allow to simmer on medium heat for 20-30 minutes. Enjoy!
