These simple ingredients are nutrient-filled yet will get you in the mood for fall foods. Grab a butternut squash from your local grower for a delicious in-season veggie that tastes SO GOOD!
Butternut Squash Soup
Ingredients
- 2 Cups Vegetable Stock
- 4 Cloves garlic Minced
- 1 Granny Smith Apple Chopped
- 1 Butternut Squash Peeled and Chopped
- 1/2 TSP Salt
- 1/2 TSP Pepper
- Dash Cayenne
- Dash Cinnamon
- Dash Nutmeg
- 1/2 Cup Coconut Milk
Instructions
- Add chopped fruits and veggies to a crockpot. Add vegetable stock and spices.
- Cook on low for 5-7 hours or on high for 3-4 hours.The ingredients will be soft.
- Add everything to a blender and puree. Once smooth add back to crockpot and change temperature to warm.
Notes
- The cinnamon and cayenne may seem strange but it adds a depth of fall flavor and kick
- Top with pumpkin seeds, sour cream, or greek yogurt
- Enjoy with fresh warm bread
