- Medjool Dates
- Pistachios
That’s right! This healthy and delicious appetizer only requires 3 ingredients!
How to Make Stuffed Dates
Making these stuffed dates with cream cheese and pistachios is a breeze!
Start by removing the pit from your medjools dates. If you want to skip this step you can easily purchase pitted dates.
I buy Natural Delights medjool dates. Sadly, I do not have a coupon for you but they are available in most grocery stores or on Amazon. I have never encountered a bad batch so they have my trust!
Once the pit is removed you can throw it away. You don’t want it ending up back in the date- YUCK! Next, stuff the date with Laughing Cow cheese. I found each date is filled using about 1/3-1/2 of a triangle serving. Fill to your desired love of cheese!
It’s now time to crush th pistachios. In my opinion, this is the most difficult step of the process! Open about 15 pistachios (for 6 stuffed dates) and seperate the shell from the nut meat.
Now, crush the pistachio. This can be done in a number of ways. I place them in a plastic bag and lightly close it, so some air can still escape. Then push a rolling pin over them until they are to a size you would like.
Finally, take you cream cheese stuffed date and roll the exposed portion of cheese onto the crushed pistachios. The nuts will stick to the cream cheese and stay intact.

Stuffed Dates with Cream Cheese and Pistachios
Ingredients
- 6 Medjool Dates
- 3 Servings Laughing Cow Cheese
- 15 Pistachios Give or take
Instructions
- Open your dates and remove the pit.
- Add 1/2 o each Laughing Cow triangle into each date.
- De-shell the pistachios. Add to a plastic baggie and lightly close it. Use a heavy object, such as a rolling pin to crush the nuts.
- Roll the cheese-filled date in the crushed pistachios.
- Enjoy!
