If you do not have dark brown sugar, that’s okay. The loaf will still turn out wonderful! Light brown sugar will still suffice.
Ripe Bananas
Banana bread is made with ripe bananas but what does ripe really mean? At what stage of ripeness your bananas are will dramatically alter the outcome of your loaf.
A bright yellow banana is full of resistant starch but as they begin to further ripen they break down into simple carbs. That is why a darker banana is more sweet than one that is not as ripe.
For this banana bread recipe you want to find the right level of ripeness. Having ones that have more brown coloring than yellow is ideal.
If you don’t have any bananas ready to use try placing them in a paper bag and letting them sit for a day. Another way to quickly ripen bananas is by removing the peel, placing them on a baking sheet, then baking for about 15 minutes at 350 degrees Fahrenheit.

Easy Banana Bread with Brown Sugar
Ingredients
- 1 Stick Butter Unsalted and at room temperature
- 2 Eggs Room temperature
- 1.5 Cups Flour
- 1 Cup Mashed Bananas About 2 large ripe bananas
- 1 Cup Dark brown sugar Pressed
- 1 Tablespoon Vanilla Extract
- 1 Tablespoon Cinnamon
- 1/4 Teaspoon Salt
- 1 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
Instructions
- Preheat oven to 350 degrees Fahrenheit. Spray bread pan with non-stick spray then lay on parchment paper for simple loaf removal.
- In one bowl use a hand or stand mixer to cream butter for about 30 seconds. Add in eggs, mashed banana, and vanilla then mix again.
- In a separate bowl combine flour, brown sugar, salt, baking soda, and baking powder.
- Slowly mix bowl of dry ingredients into the bowl of wet ingredients. Once just combined pour into loaf pan.
- Bake in oven for about 55 minutes, depending on you elevation and oven. Insert a toothpick and if it comes out clean loaf is ready!
- Once done immediately remove loaf from pan and place on a cooling rack. Slice and enjoy!
