Lemon loaves SCREAM spring time. Bake a moist lemon loaf to celebrate the return of spring and allow the fresh scent to fill your home.
So, if it’s considered a loaf it’s a bread. If it’s a bread then that means it has some good nutrition in it, right? Basically what i’m seeing is that it probably should be considered a dessert but I mean it could be bread too- which is…better?
Starbucks Lemon Loaf Copycat
Have you ever had a slice of Starbucks lemon loaf? No? Well i’m not going to say you’re missing out but you could be doing better! Their lemon loaf is deliciously moist, extraordinarily sweet, and has just the right amount of lemon. After no longer working at Starbucks and living a decent distance from my nearest one, I knew I had to make a copycat recipe so I can have a heavenly slice whenever I want.
The Tools
With anything having the appropriate tools will make the job a bit easier. With this you will need some soft of electric mixer. That could mean your trusty old hand mixer or a fancy Kitchen-Aid. This will create just the right texture when mixing the sugar and butter together.
Another tool you’ll need is a standard loaf pan. If you don’t have one yet order this one off Amazon so you can make your lemon loaf in two days! A standard loaf pan is about 9X5in.
If you don’t have either of these you can always improvise. Use your hard work and determination to quickly hand mix the sugar and butter. I’m not saying it’ll be fun but sometime you’ve just got to do what you’ve got to do. If you don’t have or want a loaf pan then try using a similar pan that you already have in your cupboard!
When times get tough- get creative!
Another spring time favorite are blueberry flavored desserts! After you devour your lemon loaf try making a batch of my Healthy Blueberry Crumble Bars. Every time I make them they are gone within a day. I mean who could resist and fresh and fruity dessert!?
Moist Lemon Loaf
Ingredients
- 1 and 1/2 Cup Flour
- 1/2 Teaspoon Baking soda
- 1/2 Teaspoon Baking powder
- 1/8 Teaspoon Salt
- 1 and 1/4 Cup Sugar
- 1/2 Stick Butter unsalted, softened
- 3 Eggs
- 1/3 Cup Greek yogurt
- 2 Tablespoon Lemon Juice
- 1 Lemon zested
Lemon Icing
- 1 Cup Powdered sugar
- 3 Teaspoon Lemon juice
- 3 Teaspoon Buttermilk
Instructions
- Preheat your oven and grease a standard loaf pan. Set aside.
- In one bowl combine flour, baking soda, baking powder, and salt.
- In a separate bowl use an electric mixer to combine sugar and butter. Then, mix in eggs, greek yogurt, lemon juice, and the zest of 1 lemon.
- Add this mixture to the first bowl of dry ingredients and gently combine.
- Pour into greased loaf pan and cook for 40 minutes or until a toothpick and be cleanly removed.
- Once done, remove from pan and all too cool on a wire cooling rack.
- While cooling make your lemon Icing by combining powdered sugar, lemon juice, and buttermilk.
- Once loaf is fully cooled pour icing on loaf. Cut into desired sized slices.
- Enjoy!
