Cut the carrots in half lengthwise. Cut those piece in half. If necessary, cut thick pieces lengthwise again. You are aiming to get all carrots to be similar in size. Place on a stone baking sheet.
In a bowl combine: olive oil, honey, brown sugar, and salt. Mix thoroughly. Cover and spread over carrots.
Cook in the oven for 15 minutes. Then, flip the carrots over and cover with any brown sugar honey topping on pan. Cook for additional 15 minutes, or until they are desired level of tender.
When serving top with parsley and flakey salt, if desired. Enjoy!
