Of course there are more than three ingredients to make banana bread without baking soda, but these three are probably the oes that could use some additional context.

Bananas– Of course you need some bananas for banana bread. I recommend using two bananas that have a good amount of spots on them. Check out the bananas in the ingredient photo to see what level of ripeness i’m talking about!

Bread Flour– In order to get your banana bread to rise without adding in baking soda you need to use bread flour instead of all-purpose flour.

Baking Powder– Without baking soda, this helps the bread rise!

In addition you will need: butter, eggs, brown sugar, sugar, vanilla extract, cinnamon, and salt. There are all pretty standard for banana bread but, you don’t need the baking soda!

How to Make Banana Bread Without Baking Soda

The moment you decide you want to make a loaf of banana bread pull your butter and eggs out of the fridge! Being ready to bake and the ingredients are still cold is the worst!

Making a banana bread without baking soda is just like making a regular loaf. You start by creaming your butter and sugars, then adding in eggs, vanilla extract, and mashed banana.

In a separate bowl mix together the dry ingredients: bread flour, cinnamon, salt, and baking powder.

Next up, slowly add the dry ingredients into the bowl of wet ingredients. Carefully mix until just combined.

Add everything to a nonstick bread pan and bake at 350 for about 40-45 minutes.

Expert Tips and Tricks

The level of ripeness of your bananas matter! A green banana is not ripe enough for banana bread. As time goes on and it ripes, it will become sweeter. Opt for bananas with many brown spots. Check out the bananas in my image above showing the level of ripeness for the bananas I used!

Allowing your butter to come to room temperature is essential. If it is too cold it will not cream with the sugars. Basically, the wait to allow your butter to come to room temperature is worth it.

Cutting into a warm banana bread without baking soda loaf is a surefire way to make a mess. Try your best to allow the loaf to cool before cutting into it.

If there’s only one or two of you attempting to take down the entire loaf, try changing up the way you consume it! Try it warm with butter one day, in a yogurt bowl the next, or with peanut butter for the next slice.

Potential Mix-In’s

This is a plain banana bread loaf. You can enjoy it this way or make it your own by addin in some fun additions!

Try using:

  • Chopped walnuts
  • Cinnamon Chips

A Word From A Registered Dietitian

To some banana bread is considered a ‘healthier’ dessert while to others it’s a ‘hidden’ sugar bomb. Everyone can have their own opinions but hear me out on my stance.

To me, banana bread is a delicious loaf! I can have it with some butter for a wholesome snack/treat, I can pair it with some yogurt to make it a bit more satiating, or I can just snag a slice because I love it!

Banana bread has about two bananas. This provides some fiber and micronutrients. It also has flour. Surprisingly, flour is a great source of folic acid, has some protein, and is energy to keep you going! So, no matter what you think banana bread can serve a purpose.

  • 1 Stick Butter Unsalted
  • 1/2 Cup Brown Sugar Light; Packed
  • 1/2 Cup Sugar
  • 2 Eggs
  • 1 Teaspoon Vanilla Extract
  • 2 Ripe Banana's ~200 grams
  • 1.5 Cups Bread Flour
  • 1 Tablespoon Cinnamon
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon Salt

Instructions
 

  • Preheat your oven to 350 degrees fahrenheit. Grab out your butter and eggs and allow to come to room temperature.
  • In a medium bowl cream together the room temperature butter, brown sugar, and sugar with an electric mixer. Next, add in eggs and vanilla extract. Continue to mix.
  • Add in mashed banana and carefully combine.
  • In a separate bowl combine: bread flour, cinnamon, baking powder, and salt.
  • Slowly, mix the dry ingredients into the bowl of wet ingredients. Mix until evenly combined.
  • Use nonstick spray on your bread pan. Add mixture to pan and distribute evenly.
  • Baking in oven for 40-45 minutes. Once a toothpick can be inserted and removed cleanly, the loaf is done.
  • Allow to cool in the pan for 20 minutes. Once, cooled, slice and enjoy!

Notes

  • Cover the loaf and store on the countertop or in the refridgerator for up to 5 days.

You’ll love this recipe for a few reasons- they are incredibly moist AND you only need a single bowl!

These come out like the innards of banana bread: super soft and subtly sweet. Like a delicious slice of banana bread, you won’t want to put these down.

As I mentioned, you only need one bowl for this recipe. This means there are minimal dishes to clean up afterward, making the recipe easy to make and clean! Win-Win!

Ingredients to Make Banana Bread Muffins with Almond Flour

Most ingredients you’ll need are classic pantry staples but there are a few that are pretty important to the recipe:

Ripe Bananas- These are key for a natural sweetness!

Almond Flour Of course, you’ll need some almond flour! You can make your own at home but I recommend purchasing it. Pulsing almonds can be a bit harsh on your food processor.

Maple Syrup- This small amount of maple syrup in this recipe may seem insignificant, but it adds the perfect amount of sweetness in combination with the ripe banana.

You’ll also need baking soda, baking powder, eggs, cinnamon, vegetable oil, and vanilla extract.

How to Make Banana Bread Muffins with Almond Flour

I’ve got some good news. This recipe uses a very minimal number of dishes! This means you can whip up a batch without having to commit to cleaning a sinkful of dishes afterward.

Before starting any baking venture, grab out all your ingredients. This ensures you actually have everything you need. Also, preheat your oven and get out your muffin tin.

In a single large bowl add your mashed bananas, eggs, vegetable oil, maple syrup, and vanilla extract. Mix this all together. Then, gently mix in the almond flour, baking soda, baking powder, salt, and cinnamon.

Spray your muffin tin with nonstick spray and pour in your mixture until it is about 3/4 full. Pop this in the oven for about 15 minutes. Once you can stick in a toothpick and remove it cleanly, they’re done!

Additions and Substitutions

Plain ‘ole Banana Bread Muffins with Almond Flour and Chocolate Chips are delicious! They come out light and fluffy with the perfect amount of banana flavor. If you want to add some additions I recommend trying:

  • Chocolate chips
  • Chopped walnuts
  • A sprinkle of nutmeg

  • Be sure to coat your muffin tin well with nonstick spray. Without it, the muffin will stick to the sides. Nobody wants that!
  • There is a decent amount of banana in these muffins. This means the muffins will quickly soften, ultimately, to a point where they get ‘wet’. This is normal! Consume these muffins within three days of baking.

Almond flour has a health halo around it. By this I mean many believe foods made with almond flour are perceived to be ‘healthier’. It just depends on your personal needs.

Compared to classic all-purpose flour, almond flour has more calories, less carbohydrates, and more protein. For some this is ideal. For others, it is not. Each person has to decide what is best for them in their situation.

If someone is sensitive to wheat, using almond flour as its replacement is a great option! Many times almond flour desserts are a bit heavy and dense. Because of the amount of leavening, large amount of banana, and minimal almond flour, these muffins come out soft and fluffy!

Wet Ingredients

  • 1 Cup Mashed Banana (~2 to 3 banana's)
  • 2 Eggs
  • 1 Teaspoon Vanilla Extract
  • 1/4 Cup Vegetable Oil
  • 1.5 Tablespoons Maple Syrup

Dry Ingredients

  • 1.5 Cups Almond Flour
  • 1 Tablespoon Cinnamon
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder

Chocolate Chips

  • 3/4 Cup Chocolate Chips (additional, if desired)

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit. Grab out a muffin tin and spray with non-stick spray.
  • Grab out all ingredients to ensure you have them on hand.
  • In a larg bowl add wet ingredients: mashed banana, eggs, vanilla extract, veggie oil, and maple syrup. Mix thoroughly.
  • In the same bowl mix in: almond flour, cinnamon, baking soda, and baking powder.
  • Carefully fold in chocolate chips.
  • Fill cupcake tins about 3/4 full.
    Note: This recipe makes 10 muffins!
  • Bake for 15-17 minutes. Remove and allow to cool. Enjoy!

  • These muffins are jam-packed with banana. This makes them moist… VERY moist. So, these muffins do not last too long. Enjoy immediately after baking.
