Southwest chicken quesadilla and wraps does require a few ingredients for the best results. But, the recipe makes enough to feed a large family or to have enough for leftovers!
Be sure you have tortilla shells, Southwest Ranch, Mexican Black Bean and Corn Mix, tomatoes, cheese, coleslaw, avocado and chicken.
The ingredients really aren’t to extraordinary but together they make the perfect meal.
How to Make a Southwest Chicken Quesadilla
To make a half quesadilla you’ll need one large tortilla shell but to make a full quesadilla you’ll need two tortilla’s.
Start by heating up your stove to med-high. Spray a pan with non-stick spray. Place a tortilla on the pan. If you are making a half quesadilla only layer the ingredients on half of the tortilla. If you’re planning on making a full quesadilla fill up the entire tortilla with ingredients from end-to-end.
Once the ingredients are warm and the shell is toasted, flip the half of the tortilla without ingredients onto the filled half. Or, add your second tortilla to the top and flip.
Flipping a quesadilla, whether it be a half or full can be difficult. Try covering the pan with a plate, lifting both the pan and plate up, and flip the quesadilla onto the plate. Then, slide the quesadilla back onto the pan to heat the other side.
How to Make a Southwest Chicken Wrap
Folding a wrap can be difficult and messy. For the best results you want to pick a tortilla shell that is larger than you would expect.
If you are buying a pack of tortilla shells from the store try to look for a pack that says burrito. This just ensure that your shell will be large!
When you are ready to put together your wrap start but warming up your tortilla in the microwave for 10-15 seconds. This will give the wrap more give and flexibility.
Next, add you ingredients into an imaginary rectangle in the front-middle of the shell.
To fold, fold in both sides as tight as possible. Next, flip the front of the shell back overtop of the folded in sides. Again, you want this as tight as possible.
From here all you have to do is take the whole wrap and roll it backwards overtop of the remainder of the empty tortilla!
