Pumpkin season has arrived and is here in full-force this year! With everyone still hunkered down in their homes we’re all holding on to all the holiday spirit we can muster! Soon, 50% of the foods you eat will be pumpkin flavored so you may as well dive in with these super easy, no-bake Pumpkin Chocolate Chunk Bites! They’re smaller than a cookie and an easy ‘munch’ snack that won’t get your blood sugar wack! The whole-grain oats are a complex carbohydrate that releases sugar into your bloodstream slowly AKA no sugar high and imminent crash.
The easiest part of this recipe is that there is no difficult shaping or baking involved. All you have to do is combine all the ingredients and form them into your preferred shape! No worries if they look a bit off , they’ll still taste the same!
The most difficult aspect is letting them cool in the fridge! Yes, this part can be adjusted (or skipped), but by pacing them in the fridge you are allowing them time to hold their shape. If you plan to skip forming a shape altogether, skip it completely, grab a spoon and dig into the mixture. There’s no eggs so you are in the clear to go for it!
Pumpkin Chocolate Chunk Bites
Ingredients
- 1 Cup Quick Oats
- ¼ Cup Pepitas
- ⅓ Cup Chocolate Chunks
- ½ Cup Pumpkin Puree
- 1 tablespoon Maple Syrup
- 1 teaspoon Cinnamon
- Pinch of Salt
Instructions
- Grab a medium size bowl and gather all ingredients.
- Prep parchment paper on a plate and set aside.
- Combine all ingredients in bowl.
- Use a 1in scoop to grab equal amounts of mixture. Push together tightly then slightly flatten. Place on parchment paper.
- Repeat until all mixture is used.
- Place in fridge for 15 minutes.
Notes
- There are no artificial ingredients used in this recipe so be sure to store in an air-tight container
- Lasts about 5 days before going bad
