Olive oil cakes are the perfect change from the traditional cake. It sounds like a sophisticated treat that would have to be purchased from a bakery; fear not, there are only a few simple steps! Grab your favorite bottle of olive oil and lets get baking!
Increase The Flavor!
An olive oil cake is delicious on its own or it can be had with powdered sugar, fruit, or a scoop of vanilla bean ice cream. You can even add an icing to pump up the sweet fruity flavor! Just combine: 2 tablespoons of orange juice to 1/2 cup of powdered sugar. If you love a cake dowsed in toppings, double it!
Olive Oil Selection
When selecting the oil you are going to use, it matters. Pick one you enjoy. It’s taste will come through in the finished cake so you don’t want to be mixing two remaining portions of oils from the back of your pantry. There are shops where you can now taste samples of oils before you even select one to buy! As with wine, there are different flavor profiles, tastes, and types. If you are looking for something simple you can always pick up a bottle of Pompeian from nearly any grocery store or here from Amazon.
Before you begin you need to make sure you have all your ingredients in order to avoid a last minute run to the store. Obviously with a name like Olive Oil Cake with Orange Zest it’s easy to understand you’ll definitely need some olive oil and an orange!

Fresh Oranges vs Orange Juice
Most recipes will infuse the flavor of lemon into the cake. Olive oil and lemon go together well, but why not mix things up a bit and use orange? You need at least 1 fresh orange to zest into the cake but if you feel motivated you can use additional oranges to squeeze into the batter as well. If you are like me and want a simple version, you can always just use your regular container of orange juice you have at breakfast.

Olive Oil Cake With Orange Zest
Ingredients
Dry Ingredients
- 2 Cup All Purpose Flour
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
Wet Ingredients
- 3 Eggs
- 1 and 1/2 Cup Sugar
- 2 Tablespoon Orange Juice
- 1 Cup Extra Virgin Olive Oil
- 1/2 Cup Milk
- Zest of 1/2 Orange
- 1/2 Teaspoon Salt
Optional
- 1/2 Cup Powdered Sugar
Instructions
- Preheat your oven to 350 degree's Fahrenheit. Grease a 9in springform pan and set aside.
- In one bowl combine dry ingredients. Set aside.
- In another bowl add eggs. Use a hand or stand mixer to mix eggs for about 1 minute. Add remaining wet ingredients and combine.
- Combine wet and dry ingredients then add to greased springform pan.
- Cook 40 minutes. Once a toothpick can be removed with no wetness cake is done. Remove from oven and take off sides of springform pan. Place on a wire rack to evenly cool.
- Once cool add powdered sugar if desired.
- Store in an air-tight container for up to 4 days. Enjoy!
Notes
- If you want an additional glaze simple combine 2 tablespoons of orange juice to 1/2 cup of powdered sugar and drizzle on the cake once it has cooled!
