I came up with this recipe while living in the dorms- I would always crave macaroni and cheese but had absolutely no motivation to make the trip to the cafeteria. Now that I don’t live in the dorm, this is still a staple for me because you can make it with foods you probably already have; it’s quick, and you don’t have to make a family sized portion. I have always used elbow noodles because it is a smaller pasta with more surface area so it cooks quicker but you can make any adjustments you’d like!!
Here is the mac-and-cheese with the two types of cheese and no extra additions
Then here is the same mac-and-cheese with bacon bits and salt and pepper added in
Microwave Mac-and-Cheese
Ingredients
- 1/2 Cup Elbow Noodles
- 1/2 Cup Water
- 1/4 Cup Shredded Cheese Or Desired Amount
Instructions
- Add your noodles and water to your mug and microwave for 5 minutes, stirring every minute. If the water boils over add more. (depending on the strength of your microwave the timing may be longer or shorter).
- Once the noodles are done mix in your shredded cheese.
- Enjoy!
Notes
-If you have any (non-dairy)milk, butter, or half and half, adding it at the same time you add the cheese will make for a more creamy result- If not, don’t fret it will still turn out delicious!
-Cheddar cheese is great to use but I usually do a mixture of both cheddar and mozzarella to amp it up!
-After you mix in the cheese you can add in any other ingredient you have on hand to really upgrade the flavor. some favorites for me are: bacon bits, spinach, or tomatoes. You can really add just about anything!
