Ingredients
Just because the flavor of these muffins are great for the spring, there are no ingredients that you can’t typically find year round-
Lemons– You’ll need about two or three.
Greek yogurt– Make sure it is unflavored!
Some other ingredients you’ll need are: flour, sugar, baking soda and powder, oil, eggs, and vanilla extract!
How to Make Lemon Yogurt Muffins
Start this recipe by grabbing your eggs out of the fridge! These are better when at room temperature.
Also, preheat your oven to 350 degrees Fahrenheit and grease a muffin tin.
In a large bowl mix together the Greek yogurt, eggs, lemon juice, oil, and vanilla extract.
In a medium bowl combine the flour, sugar, baking soda and powder, and lemon zest.
Then, slowly combine the medium bowl of dry ingredients into the large bowl of wet ingredients.
Divide the mixture into the 12 muffin spaces, and bake in the oven!
Once they’re done be sure to allow them to cool in the muffin tin. This way they can continue to cook. Then, once they are cool, remove from the tin and enjoy!

One of the biggest tips for this recipe actually lies in the tools you use. During the first few tests of this recipe I was using a regular grater to zest my lemons. Eventually, I gave in and got one. I highly recommend you do too. Using a real zester truly makes it so much easier!
Be sure to get your eggs out early! Room temperature eggs will work a bit better than if they come directly from the fridge.
If you are a yogurt parfait lover like me, try crumbling a muffin over top of a bowl of Greek yogurt instead of granola. It makes for a delicious option!

Lemon Yogurt Muffins
Equipment
- 1 Zester
Ingredients
Wet Ingredients
- ½ Cup Greek Yogurt
- 2 Eggs
- 5 Tablespoons Lemon Juice
- ⅓ Cup Vegetable Oil
- 2.5 Tablespoons Lemon Zest
- 1 Teaspoon Vanilla Extract
Dry Ingredients
- 1 and ¼ Cup All-Purpose Flour
- ½ Cup Sugar
- ½ Teaspoon Baking Soda
- ½ Teaspoon Baking Powder
- ¼ Teaspoon Salt
Instructions
- Grab out your eggs to allow to come to room temperature. Preheat your oven to 350 degrees Fahrenheit. Spray the muffin tin with nonstick spray and set aside.
- Clean your lemons, zest and juice them. Set aside.
- In a large bowl combine all wet ingredients. In a medium combine all dry ingredients.
- Add the dry ingredients into the bowl of wet ingredients and combine.
- Fill the muffin tin with batter.
- Bake in the oven for 15 minutes. Remove, and allow to cool in the muffin tin. Once cool, remove from muffin tin.

- Store in an airtight container.
- Consume in 3-5 days.
