Everyone is trying to make desserts healthier now-a-days. This isn’t a bad thing, unless those are the only types of desserts you’ll allow yourself to have. With blueberry season coming to a close it is time to make use of any leftover berries you have. You can make these Blueberry Crumble Bars with common foods in your pantry.

Healthy Blueberry Crumble Bars
Ingredients
Crumble
- 3/4 Cup Sugar
- 1 1/2 Cup Flour
- 1 1/2 Sticks Unsalted Butter
Filling
- 1 Cup Sugar
- 2 Eggs
- 1/2 Cup Greek Yogurt Plain
- 1/3 Cup All Purpose Flour
- 2-3 Cup Blueberries
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grab a 8x8 baking pan and line with parchment paper. Set aside.
- In a large bowl combine crumble ingredients with an electric mixer. Use chilled butter.
- Once it forms a crumbly texture press most of it into the bottom of the line pan. Set aside 1 cup of crumble. Let cook in oven for 15 minutes.
- In another bowl crack two eggs and fully whisk. Then, add the remaining filling ingredients besides blueberries.
- Gently fold in desired amount of blueberries in order to keep them in tact.
- Add the filling to the cooled pan of crumble.
- Add the 1 cup of crumble that was set aside on top. Place in over for 40-45 more minutes until golden.
- Remove from oven and let cool before cutting.
