Why You’ll LOVE This Recipe

I won’t argue with you on the top of chocolate chip cookies being the best type of cookie out there. But, sometimes you need to tweak it. These Chewy Chocolate Chip Walnut Cookies are the perfect solution to this predicament.

Adding some walnuts doesn’t just add some enticing texture to these cookies, they also add a ton of healthy nutrition! Walnuts are a nutrient-dense nut that provide healthy fats, may help reduce blood pressure, and are rich in antioxidants!

If there is another reason why you end up loving this recipe, be sure to leave it in the comments down below!

Ingredients and Tools

Most cookies use similar ingredients. What changes is the technique and amount! Each ingredient has a purpose and altering it would create a drastic change to the cookies!

All Purpose Flour– This flour’s name says it all. It truly is all purpose, and chocolate chip walnut cookies are one of those purposes!

Sugar– We are strictly using white sugar for these.

Eggs– The two eggs for these cookies need to be at room temperature. This is your reminder to go get them out of the fridge now!

Butter– While you’re grabbing your eggs out, grab out a stick of butter as well!

Baking Soda and Powder– These two have similar appearances and purposes, but are not interchangeable! There is a slight difference that means they both need to be used!

Salt– It is always best to use an unsalted butter. Then add your own salt. This way you can control how salty your recipe actually is.

Vanilla Extract– You can taste the difference when using a high quality vanilla extract. If you’re looking for a deal, check out a wholesaler!

Chocolate Chips– A basic cookie ingredient. Use semi sweet chocolate chips for this cookie recipe.

Walnuts– And potentially the most necessary ingredient to make chocolate chip walnut cookies: walnuts! You can get whole or chopped. You will end up chopping them in the end!

chocolate chip walnut cookies on baking sheet

There are a couple kitchen essentials that will make this recipe easier (and maybe even yummier!).

One kitchen tool is a stone baking sheet. This is a different material than your normal everyday baking. If a steel baking sheet is used, the amount of time in the freezer and oven also needs to be altered.

Another is a cooling rack. These cookies have to set on the pan after coming out of the oven, then need even more cooling time on a cooling rack. Without one, you will be spending more time in the kitching waiting around for them to cool before popping in a second batch of dough!

Chocolate Chip Walnut Cookie Directions

Making this recipe is extremely similar to making a classic batch of chocolate chip cookies. The thing is, not all chocolate chip cookie recipes are treated evenly!

To start, you want to combine your dry ingredients: flour, baking soda, baking powder, and salt.

In a separate bowl cream together your butter and sugars with and electric mixer. Then add in the eggs and vanilla extract. Once this is together slowly add in the dry ingredients.

cookie dough in white bowl

Now, plop in half of the recipes crushed walnuts and chocolate chips.

This next step may get you annoyed- sorry! Cover your dough and place it in the freezer for 10 minutes.

Once you have painfully waited your 10 minutes grab 2 tablespoons of dough and roll it into a smooth ball.

Next up, use the remaining crushed walnuts and chocolate chips to the top of the dough balls. By doing this you can ensure each cookie has ample goodies right on top!

Expert Tips and Tricks

  • When forming your chocolate chip walnut cookie dough balls, wetten the palms of your hands with water. This helps keep the dough from sticking.
  • When storing your cookies in your airtight container, add a slice of bread. This will keep them soft longer.
  • If you like sweet and salty, add a sprinkle of flakey salt immediately after taking the cookies out of the oven.

A Word From A Registered Dietitian

Walnuts are packed-full with nutrients and just because they are in cookies doesn’t mean you don’t get their benefits!

Walnuts have antioxidants and omega-3 fat.

Antioxidants help prevent against oxidative damage. This damage harms cells to disrupt their functioning and may even end up killing them! Omega-3 fats are great for both your body and your brain. They are highly linked to providing benefits on cancer, inflammation, blood triglycerides, and other health concerns.

Why You’ll LOVE This Recipe

You already love chocolate chip cookies. Now it’s time to change it up just a bit. Using coconut sugar in place of white sugar will change the way you see chocolate chip cookies!

You are going to love this recipe because you only need to swap one ingredient from the classic recipe with a dramatic flavor change.

I especially love these cookies because they turn out SO fluffy! I mean really, who doesn’t love a fluffy cookie!?

Coconut Sugar Chocolate Chip Cookie Ingredients

If you already have coconut sugar on hand, you likely don’t even need to make a special trip to the grocery store for the ingredients to make these tasty cookies.

All Purpose Flour- This is your basic flour you likely already have in your pantry.

Baking Soda and Baking Powder- These two are the leavening agents. They help give the cookies some lift!

Salt- Using unsalted butter then adding salt may seem a bit strange, but this is done to be able to control how much salt is in the recipe.

Coconut Sugar- This will be one of the most important ingredients in this recipe! You can find it right in the baking aisle or on Amazon. FYI- coconut sugar and coconut palm sugar are the same thing!

Butter- Grab this out of your fridge now and let it come to room temperature!

Vanilla Extract- This is used for many cookie recipes, you are likely to already have this on hand in your pantry!

Egg- You will only need one!

Chocolate Chips- I used semi sweet, but you can use any variety your prefer for this recipe.

How To Make These Cookies

I have absolute confidence that you can make these cookies!

Start your baking by grabbing out the butter and egg from the refrigerator. You want these to come to room temperature by the time you go to use them.

First off, cream together the room temperature butter and coconut sugar. Then, add in the egg and vanilla extract.

Secondly, combine the flour, baking soda, baking powder, and salt in a medium bowl. Take this mixture and slowly add into the other bowl of ingredients.

After, slowly add in your chocolate chips.

See, this has been so easy so far! You’ve got this!

Take your trusty cookie scoop and place similar balled portions on a baking sheet. Then pop this in the oven. After, allow them to cool (or risk it all and only let them cool for a few minutes!).

What’s left? Enjoy! You’ve just made yourself a delicious batch of Coconut Sugar Chocolate Chip Cookies!

Expert Tips and Tricks

Here are a few different tips and tricks to try while making this coconut sugar chocolate chip cookie recipe to take it to the next level!

  • If you don’t yet have a cookie scoop, I would recommend grabbing one. This tool makes it extremely easy to grab equal portions of cookie dough, ball it up, and keep your hands clean!
  • Once the cookies come out of the oven, grab a cup and run it around the cookies. This will shape the cookies into more perfect rounds.
  • If you enjoy a sweet and salty combination, add a sprinkle of coarse salt on the cookies immediately after they come out of the oven.

If you have any other tips and tricks, be sure to share it in the comments down below. This will be helpful for others trying the recipe, and also me!

A Word From A Registered Dietitian

Coconut sugar has a reputation for being a ‘healthier’ sugar alternative. Compared to white cane sugar, coconut sugar does have a bit more nutrition, but not as much as you’d hope for.

Coconut sugar has iron, zinc, calcium, potassium, polyphenols, antioxidants, and fiber. The thing is, you’d have to consume QUITE a bit of coconut sugar to get your daily need of these nutrients.

These cookies use coconut sugar simply because they create a dramatic change in flavor from use of white cane sugar. With coconut sugar, these cookies taste more toasted with a wisp of coconut.

Choose the sweetner based on which you prefer the taste of!

Why You’ll LOVE This Recipe

Do I really need to explain to you why you’ll love this recipe?? This is a holiday classic for my family. If you’ve never had it, I can’t recommend it more!

This recipe makes a generous portion. It is meant to be shared with loved ones and enjoyed all throughout the holidays.

You can keep a dish stocked with Christmas Muddy Buddies to snack on as you pass by, pack an easy after-lunch sweet, or bring to a holiday party! There are SO many occasions this treat can come in handy for. Make it once and enjoy it all month long! (if it makes it that long!)

Ingredients to make Christmas Muddy Buddies

Ingredients You’ll Need

Christmas Muddy Buddies has all of the goodies you want. The main items are:

Chex– You really can use any flavor of Chex, but I recommend one box of peanut butter and one box of chocolate to really amp up the flavor!

Red and Green M&M’s– These M&M’s are only in stores around the holidays but if you can’t wait check out Amazon for festive M&M’s year-round!

White Chocolate– Using white chocolate instead of milk chocolate will have this version of Muddy Buddies appear more snow-like. Perfect for the chilly holiday season!

Reese’s Bells– I had the TOUGHEST time finding Reese’s bells near me. These would be incredibly cute in this mix but if you’re not up for a $13 bag of chocolate, just use some regular mini Reese’s.

Powdered Sugar– As you may expect, there’s a hefty amount of powdered sugar in Muddy Buddies. Hey, that just means it’s extra sweet!

In addition to these ingredients you’ll want to use a large bowl. If you don’t have a large bowl, you can always do two batches in smaller bowls.

Small christmas tree bowl of puppy chow

How to Make Christmas Muddy Buddies

Creating a batch is more about mixing, rather than actual baking. This makes for a great recipe to make with kids! They can be tasked with throwing in the items, mixing it up, and maybe only having a couple sneaky pieces!

In a very large bowl add the peanut butter and chocolate Chex pieces. Give this a good mix.

Next up, melt your stick of butter and white chocolate. Drizzle those onto the Chex. Before you begin to mix it in, add the peanut butter.

Once the butter, white chocolate, and peanut butter are about halfway mixed in slowly begin to add in the powdered sugar.

Finally, add in any additional candies such as Reese’s and M&M’s! If you want to add some other goodies, check out the paragraph below for some fun ideas!

Optional Additions and Changes

This combination is pretty incredible as is but everyone has different preferences. Here are some ideas to change this recipe up a bit-

If you make any other changes that are delicious be sure to leave it in the comments down below, I’d love to also give it a taste!

Expert Tips and Tricks

One of the most important tips I have for you, and I cannot express this enough, use a larger bowl than you’d expect!

Another tip that is more important than it seems is to slowly mix in the powdered sugar. If you add the large amount it requires all at once you’re sure to make a mess when attempting to mix it in.

My last tip for you is to allow the mixture to fully cool before putting away. By placing it in an airtight container while the butter and chocolate are still warm, it will cause condensation and ultimately end up with some not-so-crunchy pieces.

Christmas Muddy Buddies FAQ’s

Everyone has their own family traditions and ways of making Muddy Buddies but here are a few answers to some general questions that may come up when making this dessert.

How long does this take to make?

Once you have all the ingredients gathered there really only assembly necessary. To assemble and mix it will take about 10 minutes. Unfortunately, when powdered sugar is involved there’s usually a mess. Don’t be surprised if it takes another 5 minutes to clean up all the stray sugar!

How should Christmas Muddy Buddie be stored?

Store your Muddy Buddies in an airtight container in room-temperature.

Are Muddy Buddies the same as Puppy Chow?

There isn’t a specific difference between Muddy Buddies and Puppy Chow. If you are from the midwest, you know the two are interchangeable and a staple at every holiday!

close up of Christmas Muddy Buddies

A Word From A Registered Dietitian

I’m not going to try and make this flowery. This Christmas Muddy Buddies is quite sweet. That doesn’t make it ‘bad’. Food has no morals. No food is ‘good’ or ‘bad’.

This is a delicious mixture to have around the holidays that brings people together and can be shared to show your love! This may not be a great item to have all day, every day. That’s totally fine.

A healthy and balanced diet includes foods you enjoy and bring you happiness.

Pumpkin Chocolate Chip Bars Ingredients

This list of ingredients for these Ultimate Pumpkin Chocolate Chip Bars make seem long but really you will have most items as staples in your kitchen!

All Purpose Flour: This may be one of the most common types of flour found in American pantries. This is a basic staple that can be used in SO MANY recipes.

Cinnamon: Cinnamon is one of the most common types of spices, especially during the fall season.

Nutmeg: A small amount of nutmeg goes a long way. This spice will compliment the cinnamon and add a warm depth to this recipe.

Baking Soda: Use baking soda for rise!

Salt: It may seem strange to use unsalted butter then add salt. I do this so we can control and standardize the amount of saltiness in these pumpkin chocolate chip bars

Unsalted Butter: Be sure to get this out early so it can start to soften to room temperature!

Brown Sugar: Using brown sugar instead of regular old white sugar beans there is additional warm flavor!

Vanilla Extract: Using a high quality can really make a difference.

Egg: While getting out your butter grab an egg. This should also be close to room temperature when you are making these bars.

Pumpkin: You can actually find cans of pumpkin puree all year long in the baking aisle of your grocery store! That means you don’t need to wait until the fall to enjoy a batch of these Pumpkin Chocolate Chip Bars!

Chocolate Chips: To me the more chocolate, the better. I use milk chocolate chips as I have them on hand but imagine using dark chocolate chunks in this recipe! That would be delicious.

ingredients for pumpkin chocolate chip bars

Once i’ve perfected this Pumpkin Chocolate Chip Bar recipe, I made them two times in one week. I hope that shows how easy to make and irresistible they are!

Prepare your space by preheating your oven to 350 degrees and lining a 8×8 square dish with parchment paper.

Start by making these bars by combining flour, cinnamon, nutmeg, salt, and baking soda.

Then, use a hand mixer to cream together softened butter and brown sugar. Once it is creamy, mix in the egg, vanilla, and pumpkin.

Next, slowly combine in the flour mixture into the wet ingredient bowl.

At the very end use a large spoon to disperse chocolate chips into the dough. Add the dough into the lined dish. Evenly spread the dough into the dish. If you want to top with additional chocolate chips, do so now!

Substitutions and Alterations

There are so many different takes you could go for with these bars! Here a couple of my ideas but let me know in the comments below if you do something different.

  • Use white chocolate chips instead of milk chocolate chips. Or, even try using chocolate chunks!
  • Once the bars are cooled, pipe on some icing!
  • Add some nuts to the batter and on top. Maye try walnuts or pecans?

How to Serve

These pumpkin cookie bars may seem like they are straightforward, with one way to serve. You’ve got to get creative!

  1. Serve them warm out of the oven or wait a bit until they’ve cooled more. Each way will give a slightly different experence.
  2. Add a scoop or two of vanilla bean ice cream! The juxtaposition of taste and temperatures is amazing.
  3. Drizzle on some chocolate sauce.
  4. Pair this treat with your morning coffee. I won’t tell.
  5. Cut into bite size pieces to enjoy more often!
stacked pumpkin chocolate chip bars on a small plate

Recipe Tips and Tricks

In order to have the best results with the least amount of time, be sure to get your butter and egg out of the fridge as soon as you decide to make these Pumpkin Chocolate Chip Bars! If you don’t want to wait too long for the butter to soften, cut it up into smaller pieces. This means there is more surface area and will come to room temperature quicker than if it were in a stick!

Be sure you are using pumpkin puree, not pumpkin pie filling! These are two different things and will result in a different outcome than you’re hoping for.

When spreading the dough into the baking dish use a large spoon. This dough can be heavy. Using a regular spoon will be frustrating and difficult!

Right before you pop the dish in the oven, add additional chocolate chips. This dish is loaded with chocolate chips and the little bit extra on top can only make it even better, right!?

Pumpkin Health Benefits- A Word from a Registered Dietitian Nutritionist

Pumpkin is rich in both vitamin A and vitamin C! Both are vitamins that are beneficial to your health.

Vitamin A is a fat-soluble vitamin. That means you need fat in order to absorb this nutrient. And guess what? These pumpkin chocolate chip bars have fat! This vitamin aids in vision, skin health, immune system function, and even cell development. Pretty important!

Vitamin C is known to be in oranges but it’s actually in a ton of other foods, too. Our bodies are unable to create its own vitamin C, so we need to get it from our food.

This nutrient is good for your immune system but even more it also acts as an antioxidant, promotes wound healing, and improves iron absorption! Dang- these pumpkin cookie bars sure have some goodness!

Why You’ll LOVE This Recipe!

Imagine pulling a fresh Blueberry Pumpkin Loaf from your oven, the blueberry aroma filling your kitchen. Slicing a thick piece, snagging the crumbs as no piece can be abandoned. You schmear a soft pad of butter. It gently melts as you take a heaping bite.

That is the moment you’re making this loaf for.

When to Make This

This is the perfect loaf to make as fall wraps up! It uses a small amount of pumpkin to use up an remainders you have from previous baking sessions. It also doesn’t have an emphasis on the pumpkin flavor- you’re probably just about over it by now!

Ingredients You’ll Need

You do need a few ingredients to make this Blueberry Pumpkin Bread but, most are ones

Blueberries- I actually used frozen blueberries but if you have fresh and are open to using them, go for it! This loaf will turn out delicious either way.

Pumpkin Puree– Use a can of 100% pumpkin puree.

Pumpkin Pie Spice This brings out the pumpkin puree flavors.

In addition to these main ingredients you’ll also need all-purpose flour, sugar, various spices, vegetable oil, eggs, and vanilla extract.

Bowl of wet and dry ingredietns

How to Make Blueberry Pumpkin Bread

This is a pretty ‘typical’ style loaf. You’ll add all your wet ingredients to a bowl and your dry ingredients to a seperate bowl. Add the wet ingredients to the dry ingredients, then gently fold in the frozen blueberries.

Next up, grease up a loaf pan then add in the batter. Shake the pan a bit to spread the batter around evenly. Pop this in the oven and bake for 45-50 minutes. I know this is quite the bake time, but trust me, it’s worth it!

Frequently Asked Questions

How should this bread be stored?

This bread should be stored tightly wrapped in saran wrap or tin foil at room temperature or in the refrigerator.

Can you freeze Blueberry Pumpkin Bread?

You can freeze Blueberry Pumpkin Bread! You can slice it prior to freezing for easy access or in one whole loaf. Tightly wrap in saran wrap or tin foil then place in freezer.

How else can I eat this bread?

This loaf may be a strong flavor combination, but it can still be enjoyed in many different ways!

  • A thick layer of butter
  • Blueberry compote or jam (or jelly, if you’re into that)
  • Turn it into french toast

Expert Tips and Tricks

Keep your frozen blueberries in the freezer until right before using. This keeps them as frozen as possible for less color spread. If you are concerned about the blue of the blueberries and orange of the pumpkin combining, give the frozen blueberries a light dusting of flour or use fresh blueberries.

Some dessert loaves have a lot more added sugar than you’d expect. This loaf does have a bit, but a whole lot less than you’d expect for how tasty it is!

A Word From a Registered Dietitian

Not every ‘treat’ needs to be insanely sweet to ‘hit the spot’. This loaf is on the ‘less sweet’ side of the sweet spectrum, if you will.

By enjoying your cravings in moderation, as they arise, means when you have access to any baked good it doesn’t need to be over-the-top to be enjoyable!

Enjoy both your super-sweet snacks and your not-so-sweet snacks.

These Super Easy 4 Ingredient Banana Oatmeal Cookies are a healthy and simple treat to keep around the house. You can pop them in your mouth as a quick snack or instant sweet tooth cure!

Why You’ll LOVE This Recipe

There are endless reasons to love this recipe. You will love that these have simple ingredients. Not having to take a trip to the store to make a simple recipe is always great.

Another reason to love this recipe is the great flavor combination. Who doesn’t love peanut butter and chocolate!?

Plus, there’s banana in there so really you’re getting a portion of your daily fruit intake while eating COOKIES!

4 Ingredient Banana Oatmeal Cookies Ingredients

One way this recipe is super easy is because you only need four ingredients. And guess what? You probably have them all in your house already!

  1. Quick Oats– Ensure you use quick oats and not rolled oats. Quick oats are more broken down than rolled oats, so they are softer!
  2. Banana– The more brown, the sweeter. You decide what level of ripeness you’d like.
  3. Peanut Butter-Using a peanut butter such as Jif will hold the cookies together better than a runnier variety.
  4. Chocolate Chips– Any that you have on hand work. I used semi sweet chocolate chips.

If you tend to enjoy sweeter treater, you can also add a tablespoon (or two) of honey! In addition to adding some wholesome sweetness it would also help glue the cookies together even more!

Ingredients: Bananas, Oats, Peanut Butter, and Chocolate Chips

Baking Directions

This recipe is a mix between a no-bake cookie and a regular cookie recipe. Honestly, you could easily turn these into no-bakes! Simply skip the cooling and baking step. Simply, form into the rounded shapes and enjoy.

Start to make these oatmeal banana cookies by mashing the bananas in a large bowl. Next, add in the oats and peanut butter. Mix this all together. As it is starting to come together add in the chocolate chips.

Expert Tips and Tricks

There are a few different things you can do to make these cookies the best they can be or tailored to your likings.

I chose to keep these cookies in a more rounded form. If you prefer a flatter cookie continue to use your cookie scoop as directed but instead of plopping them on the baking sheet plop them into your clean hands. Then, press it against your palms. Add to the baking sheet. You will also need to reduce the cooking time by a couple of minutes.

Another trick is to incorporate some of your favorites. Enjoy peanuts? Add them! Wanting a salty component? Crush up some pretzels! Want them a little sweeter? Try some dried fruit!

A Word From A Registered Dietitian

Cookies tend to get an unfavorable reputation as a sweet treat that should be avoided. Then, cookies that don’t have added sugar, such as these, may turn into the only type of cookie that should be consumed.

WRONG! WRONG! WRONG!

All cookies are delicious cookies. Both this type of recipe and a classic cookie recipe have a place in a balanced diet. Choose a recipe that fits into your cravings and life at the time!

Frequently Asked Questions

How Do I Store These?

These cookies are best the day of baking. If you want to store them overnight, store in an airtight container in the fridge. Because of the mashed banana the cookies will brown (oxidize) if stored overnight.

Can I Freeze These?

This dough can be baked then froze. They will not taste as delicious as if had fresh, but possible.

What Other Items Can I Add?

There are SO MANY items that can be added (or swapped if chocolate chips aren’t your thing). Some addition ideas are: raisins, agave, walnuts, crushed almonds, m&m’s, honey, peanuts, dried cranberries, chopped dates, seeds, etc.

Why You’ll LOVE This Delicious Carrot Cake Mug Cake

I know you’ll love this mug cake and end up making it over and over again… because that’s what I did!

You’ll love that this is the perfect amount of cake to satisfy your sweet tooth without having to commit to a whole cake.

You’re going to obsess over the taste. The cream cheese frosting pairs perfectly with the moist carrot cake. A mug cake is great on it’s own but add in cream cheese frosting? DONE!

When to Make This Mug Cake

You don’t need to wait until Easter to make this mug cake! This mug cake can be had as a single-serving dessert on a weekday, a fun activity to do with a friend, or a morning sweet treat!

Sometimes you can be having a craving for some carrot cake but don’t want to be stuck with 24 portions. This mug cake is the perfect solution to this predicament!

Ingredients to make a carrot cake mug cake

Carrot Cake Mug Cake Ingredients

This mug cake recipe is based off of my Grandma’s Carrot Cake recipe. If you have a party (or think you’ll want more than one serving) I recommend making this! Her cake has never let me down!

Carrots– Do you have a bag of baby carrots that seem to pay rent in your fridge? You can use a few of those up here!

Vegetable Oil– Many carrot cake recipes will use butter. Not grandma! She uses vegetable oil to make the cake more moist.

Cream Cheese– This is for the cream cheese frosting. This is an extra step on top of making the mug cake but this topping is not something you want to miss!

In addition to these main ingredients you’ll also need sugar, all purpose flour, an egg, butter (oleo), powdered sugar, vanilla extract, baking soda, and salt.

How to Make Carrot Cake Mug Cake

The (only) worst part about mug cakes are getting out the ingredients and putting them away. I swear this takes longer than actually making this dessert!

If you are going to make the cream cheese frosting be sure to get the butter and cream cheese out now! They need to be at room temperature in order to cream together.

To start with the actual cake, crack an egg into a medium-large mug and cream together with the sugar. This is a very important step to not skip over!

Next, add in the rest of the ingredients (besides the carrot). Mix it all together.

Lastly, clean and grate your carrot. Dry it if it is still wet from cleaning. Gently fold the carrot shreds into the mug.

If you are making the cream cheese frosting it is as simple as creaming the butter, cream cheese, and vanilla together then slowly mixing in the powdered sugar. Be sure to not over mix this!

Delicious Additions

If you want to take your Carrot Cake Mug Cake to the next level you can add in some delicious additions!

Try:

  • Adding a few crushed walnuts, pecans, or almonds
  • Topping it with whipped cream
  • Pairing it with a cup of coffee

If you try something else be sure to leave it in the comments down below, I’d love to give it a taste, too!

Carrot cake mug cake with cream cheese frosting

Expert Tips and Tricks

I don’t consider myself a ‘mug cake expert’ but I have made quite a few. If you’re a bit newer to the mug cake game these tips and tricks may come in handy for you.

  • Be sure to cream together the egg and sugar then the other ingredients. This may seem unnecessary but trust me here, it makes a big difference!
  • Use a larger mug than you think you need. Who cares if it ends up being too big? The real mess comes if your mug is too small.
  • If you are also making the cream cheese frosting be sure to get the butter and cream cheese out as soon as you decide to make your mug cake! It can be a real downer when you’re ready to dig in but they aren’t at room temperature yet!

A Word From a Registered Dietitian

If you’re reading this I bet you’re hoping I say, ‘it’s got carrots, it’s healthy!’. Thankfully everything isn’t black and white!

Yes, there is a small amount of carrot in this mug cake, which is better than nothing.

This Carrot Cake shouldn’t be your only source of veggies but it’s a great idea to add extra veggies to your desserts!

Chocolate Chip Cookies without Brown Sugar Ingredients

There’s no surprising ingredients in these chocolate chip cookies without brown sugar.

You will need butter, sugar, eggs, vanilla, all-purpose flour, salt baking soda, and of course chocolate chips!

Some recipes will tell you to use semi-sweet chocolate chips. Not this recipe! I find using milk chocolate chips just taste better. So, I recommend milk chocolate but if you prefer semi sweet or another type of chocolate, go for it! The recipe will still turn out.

milk and Chocolate chip cookies without brown sugar

Cookie Directions

These cookies only take less than 30 minutes from start to finish! That’s a pretty quick time from cookie craving time to cookie consuming time.

While your eggs and butter continue to come to room temperature start by making the dry bowl of ingredients. Begin my preheating your oven to 350 degrees fahrenheit. Then, in a bowl combine your flour, salt, and baking soda then set this aside.

Once your butter is at room temperature add it to a seperate bowl and pop in the sugar. Use a hand mixer to cream the two together. After, crack in your eggs and add in the vanilla. Use the hand mixer again to mix everything until it is just combined.

Next, slowly add in your dry bowl of ingredients while mixing in to the wet bowl of ingredients. Once you get all of the ingredients mixed together it is time to add the chocolate chips! Use a large spoon to carefully mix in the chocolate chips. Try not to overmix at this step!

Grab your baking sheet and cookie scoop and begin to grab evenly sized scoops of dough.

small Chocolate chip cookies without brown sugar

Cookies without Brown Sugar

Brown sugar adds a warm caramel flavor. Without this brown sugar the sweet white sugar and chocolate chips are able to shine through.

These cookies emphasize the delicately sweet flavors of classic sugar. This gives the cookie a light and airy taste.

How to Store Chocolate Chip Cookies

You always want to store these cookies in an airtight container on your countertop.

If you are concerned about them getting hard add a piece or two of bread to the container. They will absorb some moisture and keep the cookies soft! Replace the hard bread as necessary.

Before you place your cookies in your airtight container you want to ensure they are completely cool. If the cookies are still slightly warm when you put them in the container they will stick together. Then, you won’t be able to grab a single cookie! They will come in the size you stacked them!

Tips and Tricks for Chocolate Chip Cookies without Brown Sugar

There are endless tips and tricks you can find about chocolate chip cookies without brown sugar. I’ll give you a couple as to not overwhelm you with too much information:

  • Pull your eggs and butter out of the fridge as soon as you think of making cookies! It can be quite annoying to be ready to bake but you have to wait for them to come to room temperature.
  • Properly measure your ingredients. Unlike brown sugar, you don’t pack white sugar in the measuring cup.
  • Add coarse salt to your cookies as you take them out of the oven. In my opinion, they add the perfect salty balance to a sweet cookie.
  • Want more circular cookies? Immediately after removing your cookies from the oven grab a normal glass cup and run the cookie around the inside! This makes for even sides while the cookies is still soft.

A Word From A Registered Dietitian

The holiday season can bring about more Christmas pie than you typically eat. For some this can lead to anxiety and for others they embrace the sweets!

If you are one that gets anxiety by being surrounded by the plethora of indulgences remind yourself that this is a holiday season. Having so many desserts offered isn’t typical. This is a time to enjoy friends and family while sharing their homemade goodies.

In the long run, having a few extra desserts throughout the month won’t make a big impact on your health but the memories you make will last.

They make the perfect summer treat. Make a batch to bring up north, share with your friends, or stash in your freezer for any sweet tooth needs!

Must I persuade you further?

The White Chocolate and Strawberry Muffins are also pretty simple to make for such a large, delicious impact. Your taste testers will be in awe to know you didn’t buy these muffins from a bakery.

White Chocolate and Strawberry Muffin Ingredients

This White Chocolate and Strawberry Muffins recipe uses all your typical suspects for muffins. There are three items that make this recipe a bit special.

  • Fresh Strawberries
  • Lemon Juice
  • White Chocolate Chips

I did use fresh strawberries and that isn’t ideal for all seasons. If you need to use frozen strawberries, that is still going to work!

If you are using frozen strawberries use the same amount, soften them up in the microwave, then drain the excess fluid (as much as possible). Then, continue on as if they were fresh. This means you will still coat them in flour.

How to Prepare the Strawberries

I have a little trick for you. Working with fresh fruit in baking doesn’t always work out well. Sometimes the fruit is too heavy for the batter, and falls to the bottom.

Alas! I have found a way to avoid this issue.

So, for this recipe you will chop the fresh strawberries into small diced squares and place in a bowl. To the same bowl add 2 teaspoons of flour and mix. By lightly coating the strawberries in flour some of their moisture is absorbed. This helps keep the strawberries dispersed throughout the batter!

This White Chocolate and Strawberry Muffins recipe is meant to have a bit of strawberry in every bite to keep the muffins juicy and moist. Be sure to follow these steps and mix the dough evenly for a proper result!

Are strawberries not for you? White chocolate and raspberries also pair wonderfully. Try using your favorite fruit and see how they turn out. Be sure to leave a comment down below to share what you found was delicious or not.
