Mom loves apple pie but dad loves cheesecake? Well, instead of having to bring two desserts to dinner bring a Cinnamon Apple Cheesecake! If you have never made a cheesecake before it may seem intimidating at first glance. Let me assure you, I will walk you through the process the whole way so no need to worry! The most difficult aspect is planning when you will make it. It requires 2 hours in the oven and then at least 6 hours to set in the refrigerator.
Kitchen Utensils That Help
- One important kitchen tool to have is a springform pan. This is usually a rounded pan the allows you to remove the sides but keep the cheesecake on a dish. You may have one. If not you are likely to find a reasonably priced one at Target or grab one right here from Amazon.
- An apple peeler is something that may not be in everyones cupboard. It is a cheap tool that tightens to the side of your countertop and allows you to remove the skin, core, and peel an apple just by spinning the handle. Don’t have one? Grab one here for under $25!
An Impressive Topping
The image may seem intimidating but really, its quite easy- but don’t tell the people who think you spent hours putting it together! After cutting the apples you simply layer them around the cheesecake going from the outside in. The apples do not sink, rather, they sit right on top. You could say it’s ~easy as pie~.
Cinnamon Apple Cheesecake
Ingredients
Crust
- 3 Cups Crush Grahm Cracker
- 1/2 Cup Butter Unsalted
- 1/3 Cup Sugar
- 1/4 TSP Salt
Cheesecake Filling
- 24 oz Full-Fat Cream Cheese Softened
- 3 Eggs
- 1 Cup Brown Sugar Packed
- 3 TBSP All Purpose Flour
- 1/3 Cup Applesauce
- 1/2 Cup Sour Cream
- 2 TSP Vanilla Extract
- 2 TSP Cinnamon
Cinnamon Apple Topping
- 3 Apples Chilled
- 1 1/2 TBSP Sugar
- 1 TBSP Cinnamon
Instructions
Crust
- Start by preheating your oven to 325 degrees. Spray your springform pan with non-stick spray and set aside.
- In a bowl combine crushed graham crackers, melted butter, sugar, and salt. Mix until evenly combined. Mixture should stick together easily.
- Add to springform pan. Press into bottom of pan then up the edges.
- Cook in oven for 10 minutes. Let cool then place in fridge while making cheesecake filling.
Cheesecake Filling
- Change oven to 300 degrees. In a large bowl combine softened cream cheese, brown sugar, and flour with an electric mixer. Be sure to use a low speed and continually scrape edges of bowl down.
- Add sour cream, vanilla extract, eggs, and cinnamon. Mix on a low speed until completely combined.
- Pour into crust.
Cinnamon Apple Topping
- Chilling the apples beforehand makes them easier to work with. Use an apple peeler to remove the skin, slice, and decor your apples. Cut the remaining apple slices in half. Place on top of cheesecake by starting on the outside and slightly overlapping slices as you go around.
- In a separate bowl combine sugar and cinnamon. Sprinkle on top of apples.
- Bake in oven for 1 hour and 30 minutes. Now, turn off the oven but keep the cheesecake in the oven. Next, oven the oven ajar with the cheesecake still in the oven.
- Place cheesecake in fridge for at least 6 hours, but overnight is preferred.
- When ready to serve remove siding of springform pan.
- If you want to be a little extra, serve with whipped cream and caramel drizzle!
