Do you ever have a craving for something sweet but don’t want to be forced to eat the whole batch of one dessert for the rest of the week? In comes the perfect time for a single-serving dessert.
1. Avocado Chocolate Pudding
In a blender add: 1 ripe avocado, 3 tablespoons of milk, 1/4 cup cocoa powder, 1/4 cup of chocolate chips (melt before adding), a drizzle of maple syrup, 1/2 teaspoon of vanilla, and just a pinch of salt. Once it is completely blended you can add a touch more milk if you decide you would enjoy your pudding more thin. That’s all there is to it! You can enjoy it by the spoonful or use it as a dip with pretzels.
*remember this dessert has an avocado as a base so the final product will still have an avocado flavor.
2. Single-Serving Banana Bread Mug Cake
There are a TON of recipes for mug cakes online. I decided to make one with walnuts for a little variation in texture. In your favorite mug add a ripe mashed banana, milk, 1 table spoon of coconut (or regular) sugar, 1/2 teaspoon of baking powder, flour, cinnamon, and a pinch of salt.
Before you microwave it you can fold in your favorite additions like nuts, chocolate chips, or sprinkles. Then, microwave for about 90 seconds. Once it’s done you’ll be tempted to dive right in but trust me, wait a couple minutes for it to cool down and set. This will make a world of difference.
3. Single-Serving Greek Yogurt Cheesecake
To make your own greek yogurt cheesecake you add a portion of greek yogurt to a bowl and mix in Jell-o cheesecake pudding (1 teaspoon of pudding per 1/2 cup of yogurt). Next, mix in your favorite fruit. I would suggest fresh blueberries or slightly thawed strawberries. Then all you need are some graham crackers for dipping and you’ve got yourself the perfect serving of cheesecake that isn’t too bad for you either!
4. Ultimate Stuffed Dates
Ultimate Stuffed Dates are one of my favorites…ever! The sweet dates are stuffed with a glob of peanut butter then topped off with chocolate chips. If you want to take them to the next level you can add flaky salt and microwave them for a few seconds in the microwave for the perfectly soft sweet treat! The best part about these is that you can make just the amount you want to eat or make a few extra and store them in the freezer so when you want a sweet treat later! (p.s. they’re delicious frozen too!)
5. Healthy Dessert Trail Mix
In a bowl combine:
- 1/4 cup peanuts
- 1/2 cup chocolate Chex
- 1 single serving bag of Skinny Pop
- 1/4 cup chocolate chips
Easy as that! By combining popcorn and Chex into your dessert goes further. The peanuts add protein and healthy fats. You can make any changes but keeping these 3 ingredients your trail mix really isn’t too bad for you!
